Do any of you get stocked up from the store and buy stuff just for snow days? I do.

Today I'm making the Sausage-Rice Casserole..just for me. :) DH will be making his spaghetti, just for him. We have left over Burritos and Ham and Beans so we're good to go!

I love the Sausage Rice casserole so much I've had it three times since Jan. 1st. I'm a picky eater so that means the stuff is to die for. It's a hit whenever I take it to a pot luck.

Here's the recipe. Make sure you use Uncle Ben's Original rice, it cooks to perfect "fluffdom." lol

Sausage-Rice Casserole

1 lb. Sausage, browned, crumbled & drained. Jimmy Dean's Country is the best!

1 heaping C. of Uncle Ben's Original Rice.

1 C. of thinly sliced carrots

1 Can of Chicken Broth (shake well)

1/2 C. Water

Brown and drain Sausage, set aside.

Spread Rice in sprayed casserole dish, I use the size a tad smaller than a 9 x 13 cake pan.

Spread Carrots over Rice.

Add Broth over all.

Add Water.

Sprinkle with crumbled Sausage.

Cover tightly with Foil.

Bake at 375 for 30 min. Take out of oven and stir. Cover and bake an additional 30 min.

This stuff is excellent microwaved left over.

There's a sausage/rice casserole that I like but it has green pepper and onions. I only use brown rice though.

We don't have enough snow days here to really have snow day food. LOL As kids we always made snow cream - if there was enough snow. Usually walked up to my grandmother's to make it.

I'd pick something warm and creamy - probably some type soup. A good cup of hot cocoa too!

That's the bad thing about being stuck inside for days - all the food! Easy to pack on the pounds. If I were in your shoes, I'd need to make sure I DID NOT have sweets in the house (or a very limited amount)cuz I'd be wanting to eat them!

My Snow Day comfort food is Tamales with my homemade red chile sauce (which is not salsa) . . . ahhhh!

LOL...I didn't notice this thread started last year. We've had 'spring', too. Snow in November and then rain and now ice, but it's cold and windy now, and we're in for several days of snow. We've been on a soup binge (damp, cold, dark weather and I'm trying to clean out my freezers). Last week I POOFed the Christmas ham bone and broth and made black and white bean soup, and today I made turkey (meat and broth left from TDay) and noodles for our staff mtg. We had Sticky Chicken the other night. The leftover meat and broth from the carcass are in the fridge and later in the week I'll pull out some frozen creamed corn for this chowder. The seasoning on the chicken really makes it, but I've used plain roasted chicken and Penzey's Northwoods Fire seasoning. * Exported from MasterCook * Cheesy Sticky Chicken Chowder Recipe By :Katie, April, 2001 Serving Size : 0 Preparation Time :0:00 Categories : Soups Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 Sticky Chicken carcass 3 potatoes 1 small onion 2 stalks celery 2 cups creamed corn 1 can diced green chiles (at least) 1 8 oz. brick cream cheese 1/2 - 3/4 cup cream -- or evaporated milk Pick meat off chicken and dice. Cover carcass with water and simmer. Strain and cool broth. Skim off fat. Cook potatoes, onion, and celery in broth until tender. Add diced chicken, corn and chiles. Heat the olive oil in a large soup pot. Add the curry paste and cinnamon. Stir for a minute so that the olive oil gets infused with spice. Add the onion, garlic, sweet potato, bell pepper, and jalapeno. Stir and cook the veggies for 5-7 minutes, until softened. 2. Add the beans and broth. I cooked dinner for 11 people, and we had a sit down meal. DH has to bring another table in to do that, and it crowds the living room, but prefer a sit down meal. Two people were missing from our table this year... DD and her b/f broke up and my SIL passed away in May. From now on, I guess I'll be the one cooking the meal, but I love doing it. DH usually helps out quite a bit, but this year he was away in the day time. He did all the dishes, though. Here is my pastry recipe that I use for butter tarts (I cut them out with a glass) and the butter tart filling recipe as well. With pastry, the technique is just as important as the recipe: Double Crust Pastry: Put approx 1/3 cup of softened butter in a 1 cup measuring cup. Add shortening to fill, mix well, and refrigerate until chilled. Chill approx ÃÂ¼ cut of water, add a splash of vinegar and chill. When chilled, add 1 egg and beat into chilled water. In deep bowl, mix 2 cups of unbleached flour, a dash of salt and some icing sugar. Cut in shortening/flour mixture with pastry blender. Cut in until shortening is in pieces about the size of peas. Add enough of the water/egg mixture to just hold together. Roll out pastry and cut with a cutter or a glass to get the right size shells for your tart pan (you can use a muffin pan). Butter Tarts 1 cup raisins 2 tablespoons butter 1 cup brown sugar 1 egg, well beaten 1 teaspoon vanilla Pour boiling water over raisins. Let stand 10 minutes. Drain, add remaining ingredients. Stir together well. Add mixture into unbaked pastry shells and bake at 375ÃÂ° for approximately 15 to 18 minutes. I make my own pastry, and I usually freeze the tarts before bakingÃ¢ÂÂ¦ they donÃ¢ÂÂt seem to boil over that way. In fact, I chill the filling before I put it in the shells, as you don't want to melt the fat in your pastry. Makes about 24 tarts.

And Happy New Year back at'cha! Wish you all the best in these next months. :) Pit Update: Saturday a friend of a friend came and took both of them. She's mature, got a good job, owns her home with a big yard. She's keeping Bobby (aka puppy-boy) and her neighbor is taking sweet Maggie (aka puppy girl). These were the happiest, sweet dogs. Turned out to be clean, trained, house broken, curious, and just joyful. Someone dumped them, I'm sure, but they were house dogs. Perhaps breeders, but definitely house dogs. It was interesting. All the time they were here, they never left the yard. When I went out, they were right beside me. Bobby, would play catch with a 6' 4x4. Throwing it in the air, standing on it and trying to pick it up. Made it difficult for me to sort out a load of reused lumber, which had nails in it. It had to wait. He was a JOY. What a energetic puppy he was. He'd sit and kinda roll backwards with his feet stuck out in front of him, like puppies do. Didn't quite lift his leg. Hasn't earned his man card yet. Although they always wanted to ride in my car, they didn't want to go with her. (Leaving me? Awwww) But once in the car, they settled in, with their heads poking out between the seats to look out the window. The only time I'd see Maggie get excited was when wheels turned. Cars, trucks, bikes. She'd bite at them from underneath the door, vs. from the front. Scared me she'd get a tooth stuck and be crushed. I mention this, because the week before I had to get 2 new tires. Saturday night when I came out of work, I had a flat. Grrrrr. Had myself towed to my car place. He called me the next morning and asked if I'd hit anything, or was out in the field, etc. [wait for it] There were 2 puncture marks, one torn, in the sidewall of my new tire. So.... I guess Maggie is successful in her mission of killing All Things Tire. Got my living room painted. It is Beeeuuuuttiful. Even moreso without the crap stacked to the ceiling. Ceiling is Glidden 'Natural Wicker' and the walls are Duron/SW 'Tinderbox.' I just picked up the paint for the bookshelves. All this room needs is trim. and maybe some curtains. Well, maybe not. So I have 2 rooms done, -trim. This is very, very exciting! Leaves 7 rooms to go. Drywall, finishing, paint, trim. As a dear friend once said, "Baby Steps." Well, it's only 10 years this year from that stupid fire! Baby enough? Have a great, warm day. Eat those beans and rice if that's your thing, or just watch football. (Got my MI State U sweat shirt on, just for my sisters.) Take care!

I use a lot of dehydrated produce in a lot of recipes. Like last night there was dehydrated corn, kale, and wild chives in the potato and ham chowder. A few nights ago I made stuffed shells, and the tomato sauce had a heap of dehydrated quartered tomatoes and dehydrated sliced mushrooms in it. I always have dehydrated celery and carrots in the house so I have the stuff on hand for mire poix for whenever I need it without having to use up my fresh produce. When onions go on sale for super cheap, I run a few days worth or minced onions and usually have a few quarts in the pantry- right now I've run myself down to the last couple handfuls in the pantry to prep up for restocking onions soon. Herbs of course too, we use heaps of fresh and dried herbs around here. I do up tomatoes sliced, quartered, or halved depending on the kind and size. They get powdered up for instant tomato sauces and pastes, and left in bigger pieces to stew up in soups, stews, and sauces. Summer squashes get grated and dried up- used in all sorts of stuff like soups, casseroles, stews, or even rehydrated for zucchini breads. Winter squashes get cooked, pureed, and dehydrated on jelly sheets till crispy dry- then made into squash flour for baking- it is wonderful in quick breads and hearty breads- you simply replace some of the flour with squash flour. Actually you can make flour out of pretty much any pleasing combination of produce- add veggie kick to any breads, or make tasty veggie crackers. Sometimes I'll grate winter squash raw and it can get added into soups, stews, or sprinkled on pizza like cheese. I do this with sweet potatoes too- we love garlic, spinach, sweet potato, and mushroom pizzas with either white or tomato sauce. Dried and minced/powdered, you can make your own seasoning mixes, dip and dressing mixes, dry vegetable broth mix, and more. For recipes that use the green beans, try looking for it under "leather britches" recipes. Leather britches is what the old timers called the green beans they would hang on strings to dry out and eat up during the winter. I use them mostly in soups and stews, and a couple casseroles. Peppers can be dried up- I tend to do them either in rings, halved, or quartered depending on the size, but I never leave them whole. They are great for additions to all sorts of foods, or ground up into spice powders. If you have a smoker, you can smoke them before drying them too :)

Soup is comfort food here. I've made it a lot this winter ... Sweet Potato Andouille Bisque, Split Pea & Barley, Turkey & Wild Rice, Chicken & Andouille Gumbo, Navy Bean & Ham, Ginger Carrot, and I make Pasta e Fagioli year 'round.

We had some snow here a couple of weeks ago- the remnants are still on the ground.
For us its a big pot of red chili.
We had Mexican night a couple of Sundays ago- I made tacos and cheese enchiladas and guacamole.
When the kids were little and had snow days from school, we always made cookies and went sled riding.

Risotto, warm and creamy.

I also like to pull out my homemade tomato sauce that I have in the freezer and put it on spagetti, topped with some good parmesan. It's made from my homegrown tomatoes, basil, and garlic.

It tastes like August.

Oh, and sour creme enchiladas. . . . yum!

One of our favorite soups is cheesy chicken corn chowder. Having that later this week. Also my thrown together version of taco soup which we call "calico chili" due to the colorful veggies.

Snow days around here isn't about cooking. We seem to lose our electricity more often than not during storms. Losing electricity means no water, no heat and no cooking!! When a storm is coming we try to use up stuff that will need tossed if we lose electricity.

I have a great recipe for Sausage though!

1 TBSP olive oil
1 pound Adele (spelling) Italian sausage
1 pound fingerling potatoes, sliced in half length wise
1 onion, chopped
1 lemon, sliced thin with seeds removed
2 cloves garlic, sliced thin
1 cup chicken broth (low sodium)
1/2 cup dry white wine
1 tsp salt
1 tsp fresh ground pepper

Brown sausages in olive oil, remove to paper towels. Put potatoes, cut side down into skillet and cook until cut side of potatoes is brown. Add onion and garlic. Cook for 2 more minutes.

Cut sausages into 2" pieces and add back to skillet. Add salt, pepper, lemon, chicken broth and white wine. Cover and simmer for 30 minutes or until potatoes are soft.

Yummy with a big salad!

Gold, we haven't lost power but my dh is now making coffee on the FP. lol.

I did end up buying a small cake and some sugar free snacks. That's because our road grader called us last night to inform us that they will be opening roads in the opposite direction of the county seat this time, and our roads will come last. Oh joy.

I'll take the sour cream enchiladas and chili as long as I can have some fritos, onion and cheese with it. :)

Natal, Chicken & Andouille Gumbo - recipe please? TIA

DH always cooks a big pot of soup - White chili (with chicken and/or turkey sausage), Red chili (ground turkey), Corn Potato Chowder or Vegetable Barley. Always have corn bread.

Last week duting our blizzard we had meatloaf, salad and lemon cake for dinner. It always helps to have the oven going when winter is banging on the door! Generally I do everything in my power to stay away from carbs, but the cold gray and snow makes that hard sometimes. I LOVE Pioneer Woman's Fancy Mac & Cheese - haven't made it for over a year (patting self on back!) and since I don't have any pasta at all in the house, I'm safe for the moment!

Over the weekend I made a huge pot of Mushroom Beef Barley Soup, had friends over, and we sat around enjoying that with salad and another lemon cake. A rich, hearty soup like that always makes me feel taken care of even if Im the one who made it!

GD, we love Aidell's sausages! I usually get the chicken and apple, but recently found spicy mango with jalapeno at Target. Very good!

Allison, here's how I make gumbo. Amounts are approximate. I buy bottled roux. For me it's just easier than stirring for 20 minutes. When I made gumbo last week I baked the thighs (brushed with a little olive oil, S&P) instead of frying. I'll be doing that from here on. Much less mess! The andouille I buy has enough seasoning in it that I don't bother with anything else. YMMV

Chicken and Andouille Gumbo

6 boneless thighs
Flour
Salt, pepper, and cayenneÃ¢ÂÂ¨
Vegetable oil for frying
1 cup chopped onionsÃ¢ÂÂ¨
1 cup chopped green bell peppers
Ã¢ÂÂ¨1 cup chopped celery
4 - 5 heaping tablespoons of dark roux
about 8 cups chicken stock, heated
1/2 - 2/3 pound andouille, cut into 1/4-inch slices
Ã¢ÂÂ¨3 teaspoons minced garlic
Hot cooked rice
green onions, sliced

Remove excess fat from the chicken pieces. Combine flour, salt, pepper, and cayenne in paper bag. Toss in thighs and shake to coat. Ã¢ÂÂ¨Ã¢ÂÂ¨In a large cast iron skillet heat about 1/2 inch of oil until very hot. Fry the chicken pieces until crust is brown on both sides, about 6-8 minutes per side; drain on paper towels. Let oil cool, then remove from skillet, leaving as many of the browned particles in the pan as possible.

In a medium-size bowl combine the onions, bell peppers and celery.

Place the stock in a 6-quart stockpot or large Dutch oven and let simmer while you cook the veggies.

Add roux to skillet over low heat and stir while it melts down. Then add veggies and cook till soft, stirring constantly. Takes about 10 minutes or so.

Bring stock to a slow boil, then add the roux mixture by spoonfuls, stirring until dissolved between additions. Add the garlic and sausage and let simmer for 40 minutes.

While gumbo is simmering remove meat from chicken in bite size pieces. Last 5 minutes add chicken.

Serve over rice and top with green onions.

natal, I always enjoy reading (and looking at!) your cooking. Am still going to try those truffles you posted around the holidays.

My snow day go-to is Ham, Broccoli and Cheddar Soup. I make a big batch a couple of times during the winter and freeze it in soup mugs. It's ready to pop in the micro when we get home from work. So rich and delish, with cream cheese, heavy cream and mushrooms in the recipe too.

dlm, have you tried Dreamfield's Pasta? I watch carbs too, and I love it!

natal, one of my dream road trips is to go through the deep south. And I want to visit your area. And heck, while I'm there, I'd love to drop by, sit on your porch, daydream at your gardens and have something yummy to eat, lol ;) LOVE your soup bowl, who makes it?

We had crock pot beef stew through that blizzard that week. I don't cook with salt, use lots of herbs instead. I use organic broth from Imagine or Pacific (think that's the name, no carton on hand. I love those products for soup & stews. Nice mellow flavor, not loaded with sodium like bullion.) I tweak it with herbs & add sweet potatoes and egg noodles. Loaded with carbs, but it's warm & good.

i copied both these recipes...the sausage and rice casserole sounds yummy and will definitely appeal to my boys!!!
and, natal, not a big fan of okra---so your gumbo recipe sounds great!!!(i've never seen bottled roux-don't know if they have it up here-will have to look!)

i love to bake on cold, snowy days...breads and cookies, etc!

I've never had bottled roux. I'm not a fan of gumbo though, but like mentioned above, do like that your recipe doesn't have okra, Natal!

And, I'm sorry, I forgot who mentioned PW's mac & cheese, but it is DELISH. I have not had good homemade mac & cheese in a while. May have to have some now! PW has some good recipes.

I recently tried Kitchen Basics unsalted chicken broth. Much less sodium than any other brand I've tried. I'll be stocking up when it's on sale. Kitchen Basics
