Share your Snow Day comfort food

Do any of you get stocked up from the store and buy stuff just for snow days? I do.

Today I'm making the Sausage-Rice Casserole..just for me. :) DH will be making his spaghetti, just for him. We have left over Burritos and Ham and Beans so we're good to go!

I love the Sausage Rice casserole so much I've had it three times since Jan. 1st. I'm a picky eater so that means the stuff is to die for. It's a hit whenever I take it to a pot luck.

Here's the recipe. Make sure you use Uncle Ben's Original rice, it cooks to perfect "fluffdom." lol

Sausage-Rice Casserole

1 lb. Sausage, browned, crumbled & drained. Jimmy Dean's Country is the best!

1 heaping C. of Uncle Ben's Original Rice.

1 C. of thinly sliced carrots

1 Can of Chicken Broth (shake well)

1/2 C. Water

Brown and drain Sausage, set aside.

Spread Rice in sprayed casserole dish, I use the size a tad smaller than a 9 x 13 cake pan.

Spread Carrots over Rice.

Add Broth over all.

Add Water.

Sprinkle with crumbled Sausage.

Cover tightly with Foil.

Bake at 375 for 30 min. Take out of oven and stir. Cover and bake an additional 30 min.

This stuff is excellent microwaved left over.
