New Guardian Recipe Series: 10 best soups, salads. . .

A friend just sent me this link. The Guardian newspaper again, this time with, according to The Guardian

''10 best recipes: A weekly selection of simple and surprising recipes from cookbooks, blogs and professional kitchens"

New to me. Looks as if it just started, with only two weeks worth of entries: Best Soups and Best Salads.

I enjoyed looking at them. Very different.

I love the Guardian's food section, I read it every week. I've gotten some good recipes and learned a lot. I especially enjoy their "How to cook perfect......" The do some wonderful testing and come up with some great food.

They've done pancakes, pilaf, lasagna, calamari, meatballs, dal, cheesecake, creme brÃÂ»lÃÂ©e etc, etc, etc.

Alexa ******************************************************** New England Biscuits with Cranberries and Rosemary 2 cups flour 2 ½ teaspoons baking powder 2 teaspoons sugar 1 teaspoon salt 5 tablespoons cold unsalted butter, cut into small pieces ½ cup dried cranberries 2 tablespoons minced fresh rosemary, finely chopped 1 cup buttermilk 1 egg, lightly beaten Preheat oven to 400 degrees. Spray a baking sheet with cooking spray or line with parchment paper. In a food processor, combine the flour, baking powder, sugar and salt. Pulse to combine. Add the butter and process until the mixture resembles coarse cornmeal. Place the mixture in a large bowl. Stir in the cranberries, rosemary and buttermilk. Mix well. The dough will be sticky. Transfer to a floured work surface. Dust your hands with flour and knead the dough 10 times or until smooth. Pat into a round about ½ inch thick. Using a 2-inch round biscuit cutter or drinking glass, cut out biscuits and place on the prepared pan. Gather the scraps and repeat until all the dough is used. Brush the biscuit tops with the beaten egg. Bake until golden brown, about 15 minutes. Transfer to a wire rack and let cool slightly.

We usually roast a chicken on the BBQ and then have leftovers. I often add chicken to rice, which is what I did last night. I cooked the rice in the PC with celery, mushrooms, onion, and chicken broth. When it was done, I added chopped chicken and then put it on low heat for a few minutes. Often I make chicken salad with leftover chicken, and I put it through the meat grinder and use a recipe similar to what I use for deviled ham. I'm more creative with leftover chicken than I am with cooking chicken in the first place. If I do not put leftover chicken in rice, I often add it to wide egg noodles in a mushroom velouté sauce or else put it in a Japanese style soup. The last chicken soup I made was avgolemono because I had just picked lemons. Another method for cooking chicken is Yucatecan (Chicken Pibil), which uses sour oranges, chilies, and achiote paste. This is my favorite chicken for enchiladas, and I make an enchilada sauce with more achiote paste. I am now thinking about making another trip to the Yucatan.

If you like shrimp this recipe is super easy and exceptionally good! Quick Shrimp Chowder 2 tablespoons butter or margarine 1 medium onion, chopped 2 (10 3/4-ounce) cans cream of potato soup, undiluted 3 1/2 cups milk 1/4 teaspoon ground red pepper 1 1/2 pounds medium-size fresh shrimp, peeled* 1 cup (4 ounces) shredded Monterey Jack cheese Garnish: chopped fresh parsley Oyster crackers (optional) Preparation Melt butter in a Dutch oven over medium heat; add onion, and sautÃ¯Â¿Â½ 8 minutes or until tender. Stir in cream of potato soup, milk, and pepper; bring to a boil. Add shrimp; reduce heat, and simmer, stirring often, 5 minutes or just until shrimp turn pink. Stir in cheese until melted. Garnish, if desired. Serve immediately. Serve with oyster crackers, if desired. *1 1/2 pounds frozen shrimp, thawed; 1 1/2 pounds peeled crawfish tails; or 3 cups chopped cooked chicken may be substituted. The Guardian ''10 Best'' is a site I want to follow. If I am right and this is only the second in the series, it will be fun to see what future topics include.

I am seriously intrigued by the ''How to Cook Perfect. . .'' series, but I also want to know what will follow in this series. Hmmm. What comes after soup and salad?
