We entertain a lot and cook every night. When we remodeled we replaced the 30" cooktop and double wall oven with a 30" dual fuel range and 30" 240V Advantium wall oven. You will have to learn sequencing with the Advatium for multiple dishes, especially if you are going to use the microwave. The oven needs to cool down some before using the MW. We got a great deal on a GE Monogram Pro DF range and all of them are working perfectly.

I can answer the BS oven door question. My 36" BS RCS was installed two days ago (haven't used it yet, hopefully this weekend). During the burn off of the oven (high temp is 450 F for an hour) I checked how hot the oven door got, as that has been a big issue noted on these boards. On my range, the SS part of the oven door did not get hot, just a bit warm. The glass on the oven door got hotter but not that hot. What did get quite hot were the sides/edges of the oven door. I could touch the side but not for long. Definitely quite hot. Not instant burn/scald though. There are vents (or look like vents) right there so it makes sense that those areas heat up a lot. Your kids would have to press their hands up against the 2" side of the door for several seconds for it to affect them negatively. More likely a kid running around will touch the front of the door and that is not a problem, on my range at least.

We bought the Miele Combi Steam in addition to a 30" wall oven, and it is our "Go To" Oven. Use it daily. It is very versatile and being a smaller oven heats quickly. All of our baking dishes fit in this oven. It operates the same as our 30" wall oven plus the combi steam function. It is awesome for reheating leftovers/baking bread/used as a regular oven/steaming veggies- rice etc. The Miele has a broiler unlike the Wolf - not sure of your configuration but you might want to compare the Miele with the Wolf. There are several threads on these two products. Regardless of which oven - you will be happy going with a combi steam oven. Agree with the other posters that recommend you attend a demo at a Wolf/Miele design center if possible.

Also keep in mind that you are introducing a source of heat under the induction cooktop. Heat and electronics do not play well together. It is possible that you may shorten the life of the cooktop if you are not careful about the choice you make. This is probably why manufacturers insist upon using like products in this configuration. They may have ways to expel the heat with their own equipment. If I were designing something like this venting would be a priority in my remodel. It would probably involve small fans that had access to cool air to introduce into the cavity for the cooktop and possibly one to expel the warmer air. Preferably outside, however outside the cavity into the kitchen area is preferable than trying to cool with hot air. I believe keeping the electronics cool is key to a long useful life for appliances. Especially ones that produce heat.
