Hire GC for partial construction, then become owner builder?

we are building a second home (so we arent in a huge rush to finish it)and are considering owner/builder options to save $.

we do not have construction experience but we do know trustworthy, professional plumber, electrician, painter, sheetrocker, etc.

we are considering hiring a GC to build the structure up through the roofing phase and then take over. has anyone done this? if so, did you feel like you saved alot of money? or is much of the owner builder savings wrapped up in the framing, roofing, foundation etc that we would likely be paying a GC top dollar to perform.

in short, can anyone give advice on whether the savings of doing the interior work ourselves would justify the headaches and delays it would cause.
