removing a vent-a-hood

Hi, I'm new to this - but in reading through many of the posts I can tell I might be able to get some really good guidance. Thank you in advance if you can help. I am in the process of remodeling an old kitchen - mostly by myself - and I have a REALLY old (I'm thinking maybe 1946) Vent-a-hood unit mounted to the wall and ceiling of my kitchen. I need to remove it, and I'm sure that there's a right way to do it. I'm temped to just go in and start removing screws, but I'm sure that's NOT the right way. I've been to the Vent-a-hood website, but they don't really have anything for a model as old as this. Can anyone give me kind of a general idea of where I should start?
