We purchased this Electrolux Range and it arrived with the racks not properly welded and they collapsed! We have had the oven repaired >10 times in the first three years. We had a gas leak from a burned out component. Finally we tried to run the self clean and this "fried" the electronics and we could no longer open the oven door. We did not receive adequate support Electrolux ICON. We even called corporate headquarters in the USA and Sweden and the calls were NEVER returned. The exterior of this product with the stainless steel looks great., but the interior components did not hold up! This is the worst appliance we have ever purchased and it is actually dangerous.

"What would you say is the biggest difference between the gas or electric for the main oven" There are some very specific differences. Most people like their food to be browned because it adds flavor to what you are cooking. In order for food to be brown, the Maillard reaction must take place. In order for this to happen, need to evaporate water. I would look at what happens in either oven. In a gas oven, there is moisture released in the combustion of gas but because there is much more ventilation in a gas oven, it and the moisture from what you are cooking are ventilated out so you have superficial drying of your food which promotes browning. This will also add more heat to your kitchen. An electric oven is more of a closed system so will hold on to the humidity more. You can increase the superficial evaporation in an electric oven by increasing the heat or using the fan. In reading some marketing materials, Wolf and Capital, come to mind, they will state that gas is "moist heat". In the past that was the belief. That would be true of the flame but does not take into consideration the oven as a whole and the effect it has on what you are cooking. They also seem to think that the external moisture from the "moist heat" produces moist meat when it would have nothing to do with it. It is a function of the internal temperature. There are certain irreversible physiological changes to meat as the temperature rises which dictate the amount of moisture in meat fibers. Some also attribute crispiness to the moistness but again is is drying that produces that. On on the other hand, an electric oven can hold on to moisture which can be a benefit in baking because it promotes starch gelatinization. It can affect the amount of rise, browning and crust formation. This is why bread bakers add moisture at the beginning of baking and/ or use a cloche in a gas oven. The cloche is then removed or moisture allowed to escape and the drier environment promotes browning.

Not the OP but I'm still on here and a lot of water has gone under the bridge. I had the Wolf DF for about 4.5 years and the cobalt blue enamel came off of the bottom after running the self clean. This has been an issue, if you look at the lawsuits on these ranges built as far back as 2006. Quite a few posters had issues of chipping with as many a three ovens in a row. The all gas versions do not seem to have the issue (no blue interior) although they are mentioned in at least one lawsuit. I like Dacor platforms that were bigger too but the ovens I had were worthless. Mine were with the Discovery controllers at the time, different from some of the other ovens. They have since been bought by Samsung and been through model changes through the years. I though maybe they fixed them but there was recently a poster here that bought a wall oven and returned it quickly because they had issues with it. What type of cooking do you do? The Ilve has a few things that might cause concern for some people. The burners are all underpowered for what most people want now. Ranges like BlueStar and Capital have 22-25K on at least two burners. The Wolf all gas also tops out at 15K and you may have had 15 or 16K on your Dacor range So maybe that works for you. I have 15K on my Wolf DF and it is OK but it is on all burners except one. Many people complain that a griddle with 15K is underpowered so 10.5K would be even less. They also mention that the griddle is stainless so it will not season like rolled steel on Wolf. Stainless by itself is one of the poorest conductors of heat so would heat unevenly unless it has aluminum or copper sandwiched in. The French top is also only 8.5K BTUs compared to 18K on something like BlueStar. Also check out the oven size. Look at the usable rack size. A lot of space is taken up by the warming drawer. Look at the broiler size. This is the manual. fenworth, We've made the TJ cookies tons of times at home using a GE Profile oven (as stated in my original post). We also made them in a Wolf oven at a Wolf center. In both the GE and the Wolf, the cookies come out fairly "normal", even when the dough is completely defrosted (which is not recommended). We did return to Miele, used a different oven in the store, and got the same flatter-than-flat cookies, even with a TJ box that was bought 15 minutes before entering the Miele store. I can't say whether or not the grease filter was installed during cookie baking - as a newbie to the Miele oven, that's not something I would have been aware of (I kind of hope the people working at the Miele center know how to use their own ovens.) Maybe it's this particular Miele store installation, or this particular cookie dough recipe, but there's definitely something different about the way the Miele ovens we've tried bake these cookies.
