Comments (22)Thanks for the links. Those are interesting. The Wolf burner is a different design from those videos, but I don't know if it is now better or worse (although it does seem to address some of the complaints). I also don't know how different the cooktop burner on the bluestar is from the range burner shown in the video, but my hunch is they are the same. The idea of an open burner being more even has always made sense to me and appealed and the videos seem to confirm one's intuition on this. As for the Capital on the website mentioned above, they do have a rangetop, but I don't think they have a high end cooktop in gas which would work better for our current kitchen (although their rangetops would look better here than the rivals rangetops from what I can tell because it seems to be a little more slim). In any event, we don't have a Capital vendor here and so even if it were the best product (and it sounds like many feel it is) and it matched, service would be enough to scare me off probably based on where I live. Thanks again to everyone for your input! ps for Miele reliability, it is only one datapoint, but my mother in law's works hard and is like new. She is going to be appalled that we bought something else. (And given how nice hers is, I thought that would be the direction we'd go, but my wife surprised me by picking the Wolf and I felt like given that each one had strengths and weaknesses I felt like this was a good choice, but I also felt any of the three she'd picked I'd have been able to say that about)....See MoreWolf vs GE Momogram 36 inch gas range

Comments (9)Do you use a griddle now? I would consider an overlay griddle instead of a built in. The one I have(Royal industries)is 15”x23” and is about 50% bigger than a 2 burner built in. I have a Wolf range. It can be bigger because it is made of heavy aluminum which has much better heat transfer properties than steel so heats more evenly. It comes in bare aluminum which seasons over time and nonstick. With a built in you have about half of the power, somewhere around 15K BTUs. You can set the griddle anywhere you want or you have the flexibility of using all six burners. I have picked up my griddle and put it in the oven. You can take it to the sink to clean. These are Royal Industry overlays. They are pretty inexpensive. http://royalindustriesinc.com/index.php?main_page=index&cPath=4_22_48 Chef King makes a similar griddle out of steel. With the built in, you have a thermostat so you can repeatedly turn it in to a certain temperature and get that amount of heat. If you go this way, look how the different brands are built. Wolf uses an infrared burner to get a more even heat. The steel is twice as thick as BlueStar. BlueStar uses this burner on the RNB griddle. Comments (3)Why dual fuel? Get a GE Monogram gas range and call it a day. It will roast vegetables and meats like nobody's business--the infrared broiler works great! As Belaria has said, plenty of feedback on both in the discussions. I would think all gas would be a heck of a lot more reliable....See Moreaanj
