Dacor oven help!

I have a new 48" Epicure dual fuel range from Dacor. This is actually my second one since the first was damaged in shipping. I am having serious problems with the ovens keeping temperature. Both the old unit and the brand new one do the same thing. As an example -

Preheat oven to 425 on convection bake. Allow oven to come to temp using a good quality oven thermometer as my guide. Place a sheet of frozen french fries in the oven. Bake for 20 minutes. During this time, you can watch the oven temperature drop and never rise again. By the time they are 'done' the temperature is 290.

I have tried pies, cookies and other things and none turn out right. I have also tried non-convection.

I cannot believe that I got 2 non-working ovens and I am starting to think I am going crazy dealing with this. But I am really not happy paying $9,200 for a range that cannot bake pies or frozen french fries.

Does anyone else have experience with this?
