Vessel sink, Wall mounted bridge faucet, How to install

I am DIYing a 1/2 bath in my farmhouse style home. I plan to make the vanity out of 3x6 rough sawn lumber in a post and beam style. I have an old butcher block style counter I intend to use for the countertop. I want to place a copper vessel sink on it.

Question: How high should I make the vanity? I know that counter heights are around 28" for bathroom and 36" for Kitchen. I like kitchen height, so should I measure 36" inches from the rim of the vessel and make the vanity accordingly?

I also intend to use a wall mounted bridge faucet. I have read that the faucet should be about 6" above the vessel rim, so I am ok there.

But what kind of framing do I need in the wall to support this plumbing?

If the plumbing is in the wall, what do I need for valves under the sink, or do I not need them? Are shutoff valves required by code?

This bathroom has no windows, am I required to have a fan in the room?

To finish, we also intend to put up a copper ceiling. Should look intersting when done!
