Can I go from a Free-Standing to a Slide-in Range?

When we had our kitchen remodel done in 2006, we had (and still have) a GE Profile free-standing range. Because of this, the width for the range is the regular 30" (or maybe 30.25") and the depth is 24" (25" with the curved Ogee edge on granite). The counter top is granite, and the full backsplash is also granite (from the counter to the bottom of the cabinets).

I know that if I put in a slide-in range, that the left and right sides rest over the granite counter top some, and I'm missing that back-granite-bride, so would need a filler piece there. But I've been reading the installation instructions for a few slide-in models, and some of them say you have to "shave" part of the sides and front-corners of the counter top so that it will properly fit. Since doing this is not an option for me with the granite already in-place, does that have to be done and rule out being able to use a side-in range?

The reason I was eventually thinking about changing to a slide-in, was because the controls are in the front (instead of at the back), and that the full granite back-splash would be visible and would look nicer.
