I have a similar set-up. I am a very symmetrical person and I like clean lines. I don't like vanity lights. I considered doing multiple sconces like you mentioned but thought that was too busy and expensive.

So in the end this is what I decided to do:
1 can centered above makeup vanity on its own switch
1 hardwired, pull-out, lighted makeup mirror at makeup vanity at side wall to left (I figured I could turn off the can light above if I didn't want to cast shadows)
1 can over each sink, both on the same dimmer switch
A chandelier on its own dimmer switch
3 mirrors total framed in same color as cabinets (cabinet maker will frame them), top of mirrors are all level, but bottom of makeup vanity mirror comes down a little since countertop is lower there.

I centered the sinks on the vanity for symmetry.

Are you going to do medicine cabinets? If so, you'll have to frame them out. You may want to consider doing pocket doors at the closet and water closet. Think about your electrical outlets as well. You can turn them horizontally and place them lower in the backsplash. Other suggestions from gardenwebbers: electrical outlets in the medicine cabinets or under the sink inside the cabinet to hide electrical tootbrushes, shavers, chargers, etc; electrified drawer for hair dryer.

I don't have pics nor do I know if I like the lighting set-up since we are in the drywall stage. I'm keeping my fingers crossed.

Hope this helps, I lost a lot of sleep trying to come up with this plan:) Now I'm losing sleep over plumbing fixtures and backsplashes:)

I had not thought of cans directly over the sink. Which is better, over the counters or in the walkway space?

I have them directly over the sinks in my current house and they are fine. I've also seen it that way in a lot of designer pics despite people saying vanity can lights are a no-no. You can always shut off the can lights and turn on the chandelier if you want indirect light.

In the new house, I also have a couple can lights in the walkway, one is directed at the fireplace and one at the shower.

I probably overdid it with electrical but I'd rather have too much light and be able to dim, than not enough light.

Another option is put the can lights and chandelier in the walkway space. Then if you don't do medicine cabs, at the vanity sidewalls you can put a pretty 2 light sconce that matches the chandelier (1 at your side on wall to left, 1 at his side on wall to right.
