Comments (9)Doinitover - Thanks for the interesting write up. I got the Gaggenau combi steam too, and just love it. We use it nearly every day. I had a Gagg convection and pastry oven combo that I used for 20 years in our old house and had always loved the way the ovens cooked. I haven't been disappointed with the combi steam. Tonight I roasted a chicken breast (bone -in). The skin was crisp and the meat was very very moist. I baked pies at Thanksgiving and the crusts came out crisp and flaky. Often, if we want a fast meal, I steam some fish or shrimp with some veggies and it's done quickly and there's hardly any clean-up. The one thing that surprised me was how good it is for heating things up. And, it's amazing how it can resurrect a stale loaf of French bread. All in all, it's exceeded my expectations and I'm looking forward to trying other things I haven't had time to do yet. I had an older Miele - lower end version - and went with the Excella this time since I loved the cutlery tray so much. The Excella is very quiet. The trays are a little different which is taking some getting used to in terms of loading. But it cleans beautifully. Comments (48)RE: Miele vs Wolf. We have a vacation home with Miele speed oven (2010)(combo of microwave and convection with broiler), 30" convection oven, and induction cooktop. We use the speed oven for everything except large meats due to its speed of heating up with the 'rapid heat' feature, but find it inconvenient to not have a microwave available if we are using the oven. But, to simply microwave requires about 5 or 6 steps on the digital panel, a big PITA. And, guests cannot figure out how to use the German minimalist controls for the induction and the microwave. Form over function! So, with our new home in Seattle (2015) we used all Wolf this time. We use the steam convection oven daily, and we don't clean it much. I did a side by side at Albert Lee showroom putting muffins and almond croissants into the Wolf and the Miele, both cold, set both to steam convection at about 360ºF. The Wolf was easier to set (even the showroom person had difficulty navigating the Miele minimalist digital screen). In about 5 minutes the Wolf produced internally moist, externally browned and crispy croissants, the Miele was not yet flaky or crisp on the outside. So, that made my decision for me! Comments (20)I went to see the Miele CSO and oven last Friday, and I really like the CSO especially it being plumbed the the XL is big enough. The interface is great, perfect for anyone that's new to steam ovens. The regular oven is pretty much just fine. However, I still like the Wolf's look more, Miele is more modern clean look while Wolf has more rounded edges and the warmth feeling to it...I know that's so superficial LOL! One thing I am curious is, the sales guys at either Pacific Sales or Pirch all told me they would recommend Wolf, even though Miele is a superior product. I wonder if they get a lot more commission when they sell Wolf?? Also, the sales guy said if I get Miele, it's best to get the Miele installation because Miele will double the warranty makes it 2 years instead of 1. Comments (23)The worse installers and product ever. Had whole kitchen installed and they never hooked up the water lines to 3 ovens. They have been back at least 5-6 times and cannot get the combo steam oven working, its been a year and at least 30 phone calls to service, with promise of return and ok to swap out with a new one- 2 months ago- and still now one at Miele will take ownership of this issue and exchange the lemon. Incredibly poor performance for a company that bills themselves as the best product and customer service. Service managers refuse to speak with me, only front line folks (who are very nice). Go with Wolf- I spent $45K on Miele and I regret it ever since the installs 1 yr ago....See Morebarryv_gw
