Herringbone floor pattern--varied color tile/ grout size?

We had planned to put a 12" x 6" herringbone pattern of seagrass on our guest bathroom floor. The tile turned out to be dramatically varied (half very light and eventone pale green, and half darker green with white spots).

I am thinking that if I cut the pieces down to 3 x 6, and mix them in the pattern, it would look okay? Am I thinking correctly?

I am wondering what size to make the grout for a herringbone pattern---tight or larger grout lines? I am concerned with it looking too busy. We have pony walls on the shower stall done in 3 x6 white subway and white wainscotting (a simple board and battne) on the walls.
