We have light oak cabinets in shaker style with brushed nickel hardware. We chose uba tuba granite counters which look black from a distance and up close you see flecks of gold, aqua, light grey. The color contrast looks very nice. This look could fit a variety of kitchen styles. No regrets with choosing either light oak cabinets or this granite.

It's funny that you phrase it as "matches better". In general when designing around wood-tone cabinets, many people are trying to create a contrast, picking a tone that's either noticably lighter or quite a bit darker than the cabinets. Honey-oak is very medium, so either light or dark could be a good option, and depending on the room you could either go warm browns (cream/chocolate) or cool grays (pale ash, dakr charcoal/black). But I'd think that tan-type colors (the mid-tones) wouldn't look so great.

I do not have the same countertop, but cream does look pretty with oak cabinets. Oak cabinets have some "movement" to them due to the grain and so does your countertop. If the backsplash also has movement, even if it is pretty on its own, the look will be too busy - no place for the eye to rest. Make sure to either remove the microwave, tile behind and replace it or reserve enough tile to tile behind it later should you choose a hood rather than an over the range microwave. As a short person who does not like a crowded cooking space, I would change the micro for a hood, but you may have a different preference or want to wait till the microwave breaks down. I would consider something painted. It's hard to make specific suggestions without pictures, which you can add in the comments. I would consider black painted shelving, cabinets to break up the honey oak, and provide some contrast.
