Shooting for the moon - Is my 36' range search in vain?

In trying to stay on budget, but trying to get the most out of my space, here are my requirements:

36" Freestanding

Stainless

Dual-fuel (all gas would be ok)

Convection (true convection) oven

At least 5 burners - 6 would be awesome

...and the clincher:

under $3000

Is is possible? Does is exist? Am I just nuts?

The closest thing I could find is the IKEA PRAKTFULL PRO, but I can't find ANY information other than the IKEA website.

I'm continuing to search craigslist for the the perfect deal, but I'd like some options.

I only know of one that meets your criteria. Fratelli Onofri has a 36" duel fuel, stainless, 5 burner range with real convection, plus hidden bake element for under 3K. The BTU's on the cooking surface are not up to the pro range level but the fit and finnish and the look is outstanding. Check it out www.eurochefusa.com

Can you consider a 30" range instead - you can get them with 5 burners. Also, all gas will be a good bit cheaper than dual fuel - you can get convection but not "true" convection. Don't know the pricing now - but the DCS 30" all gas range (without self-cleaning which adds a lot to the price) would be a good choice - it used to be around $3K but may be a bit more now.

Sounds like noise is a big driver for you in your range hood selection. A few factors contribute to a noisy range hood: 1. Quality of blower used - most half decent range hoods today use pretty good blowers 2. Probably the most important factor contributing to range hood noise is duct issues - to small, to many bends or just badly installed. 3 Another issue is peoples desire to have the biggest cfm blower system they can find - for example 1200cfm through a 36" hood will be unbelievably loud on max settings even with ideal ducting (we have tested it so we know) - why - because the blower is pulling 1200 blocks of air 1'x1'x1' every single minute through the filters - if the filter capture area is small (36" hood) its gonna be a real noisy airflow experience. So its crictical to match the blower to the ducting, to the btu output of the range and to the range hood size. 4. The other critcial element is a well designed range hood structure where the air is getting pulled through after the filters - if the inside of the hood behind the filters has a lot of projections and things hanging out the air is going to bang against them - noise 5. Boy I would get it. A friend of mine has a smaller version of that range and it has been great. Also, I am a strong believer in different sized burners, especially with sealed caps. Just my opinion, but burners all the same size are a big mistake, even if they all have a super low simmer. The problem is when you put a small or medium sized pan on and turn the heat up past low. When the burners are all the same size (too big in my estimation) the gas flames just shoot out the sides of the pan. It's annoying on all but your largest pans. Yes, you can simmer with a small pan, but you can't cook on medium or high. The smaller diameter burners allow you to turn the heat up and have expectations of it going into the bottom of the pan, and not around it. The arrangement Vickimp has seems to make good sense, medium burners in the back corners, that can do almost anything and provide parking for those things that you want to set aside on simmer or medium, a big back burner for pasta or a stock pot of soup, and a small burner in front of it for sauces or a quick egg, with the front corner burners for sautes/stir fry and big breakfasts etc.

Viking also offers colours, although I don't think nearly as much choice as Bluestar. Hey, just to note. I was at the Bluestar "Canadian launch" demo in Toronto in the spring and a guy from Bluestar said that the 190 colours are standard FREE colours(although I think many have reported dealers upcharging for this), and that they would do any custom colour you liked at additional cost. I am only stating available options, not endorsing Viking over Bluestar. In fact, if pressed to endorse one over the other, I would go with Bluestar. I used to have a 30" Viking (no grill or griddle) which I was very pleased with overall and had no repair issues with. I currently have a Bluestar 48" with grill and griddle, and I do have to admit, the burner performance blows the Viking away. Which brand would I buy if I was buying again today? Bluestar hands down. It is probably the only residential range you can truly wok properly on, except for the few ranges that offer a high powered "wok burner", but I think that is usually in the centre of the unit, and not sure if there are any option with that plus a griddle. Although I really did enjoy my Viking and was trouble free to boot. Oh ya, one more personal recommendation. If going with a Viking, get the open burner. I did this test, and I think anyone considering a Viking should do the test as well. If you have available an open burner and closed burner Viking. Take a medium sized pot, put it on the open burner at full power and see how far the flame shoots out the side of the vessle. Then do the same for the closed burner. I noticed a difference between the two. But in my experience, there is no round burner with burner cap type design that can rival the even heat distribution of the "ported right on top" star burner configuration that Bluestar gives. Anyway, thought I would at least give you a second option :) Good luck, and let us know what you decide.

The only cooktops currently on the market that will match the performance of the Bluestar are the better induction cooktops. IF you move to rangetops then you can add the Capital Culinarian to the possibilities list.Although not star shaped the evenness is at least as good as the BS. The doughnut shape burners do not shoot straight up like in star shaped burners but are angled to cover the entire bottom of the pan. Many find it necessary to have a professional tech adjust the Culinarian burners to reach the claimed 140 degrees. If you call Capital within a year of installation the factory will send out a tech for free. The Bluestar dedicated simmer burnes can reach a lower 130 degree simmer. All Capital burners top out at the same 23k btu. BTW There is a rumored small pan burner coming to the Culinarian. The burner will not be a "simmer" burner but one with a flame pattern meant for 4-6" wide pots/pans as opposed to the current ones better suited for pots/pans larger than 6".

Buying used is going to be your best bet. Also, check scrach and dent and Ebay. But be careful on Ebay. Lots of scams there. Other than that, you're going to have to change your criteria or change your budget. I ought to know. I ended up with a GE Cafe 30" and am rather glad I didn't go the 36" route. The oven would have been too large for me, and I really like the second small oven in the Cafe. The 18K burner rocks, and I've used the griddle for pancakes several times. I really didn't need 36" for functionality. Yes, it would have looked better to have a 36" range, but I really didn't "settle" for anything that I would have been really willing to hike the budget to double what I paid to get.

Yup, prices have gone up in the last 5 years. I did a quick search and it looks like the 30" DCS now goes for around $3.5K - still a good option, though.

Many of the Ikea kitchen appliances are made by Whirlpool Italy. You can sometimes find more information via websites of British appliance dealers like "we sell it".

Sounds like the Fratelli and IKEA PRAKTFULL are basically the same unit, but not sure if the IKEA is dual-fuel. I really like the look of the Fratelli, and it's seems reasonable for the performance. Other than keeping an eye out for the random used higher-end range, I'll definitely keep both of these on the list.

You might check out a 36" American (residential) all gas range. Since it's all gas it won't have a separate electric heat for convection - but it does have 2 convection fans to circulate the oven heat. It also has a great infra-red ceramic broiler, and not a toy one like some..

My neighbor has this range in a smaller size. It is a good value. I don't know the price, but you can call at the link below to get an idea. The oven is huge. The top burners are great and have smaller burners for the small pots.

I paid $3700 plus shipping for a Thermador, which meets all of your criteria (6 burners or grill or griddle) on ebay. That seemed to be the ebay market price at the time (january 2008), but things may have changed since then.

I believe the IKEA Praktfull is a rebadged Fratelli. It's all-gas and priced at under $2000. There's info on the IKEA website now with more details.

I don't know if you have a lot of appliance places near where you live, but keep checking the scratch and dent sections and call around. We drove two hours to save $600 on our Blue Star.
I also just ran into a 110cm (44") La Cornue for only $2700 NEW!!! Too bad I don't have room!
