New build questions on replacing range at later date

I am having a new home built. It's not a true custom home, it's considered semi-custom. I have decided that it would be more economical to have them install the regular 30" gas stove they give with the house and then later upgrade to a pro range myself. They are adding outside venting but the duct size is not determined so I am assuming they give the smaller size made for non commercial style ranges.

Can I swap out the builder's range for any 30" pro style range? I haven't decided on the brand yet.

Should I have them put in larger ducting? If so what size? The ducting will vent horizontally either 13 or 24 feet (approximately) depending on which way the floor joists above run.

We don't cook very smokey items often but like to have the ventilation when we do and for daily items to keep odors down.
