wolf range -- griddle vs grill?
Comments (21)No problem, kkcooks. I just got back from a road trip myself. I call those disposable pans "foil pans" and admit I probably see more of them from take-out (which usually have cardboard rather than foil lids) than anywhere else. I never thought of using one to "self-clean a charbroiler. I am more inclined to remove an open burner range's drip pan for in-sink cleaning than my wife is and appreciate that the single grates are lighter than the double grates of Wolf's sealed model (which should benefit my wife even more). I liked the simmer burner's central flame and was a bit confused when an appliance store salesperson told me the sealed model's burner gave a better simmer by distributing the flame more widely. My guess is that the difference isn't all that great. I wonder whether the choice comes down to appearance more than function for most people (I think both look fine). Regarding the griddle being "too hot", ibbuzz, I thought more people would have that complaint about the charbroiler. In my experience, both griddles and charbroilers need to be learned. A few uses usually provides all the experience that's needed, occasionally at the expense of some burned items. Comments (1)The idea may seem ridiculous, but pellet grills are intentionally smoky, so I'd say you're on the right track. The only thing I would say is that for a hood with that large a capture area, 1200 CFM might be a little light. A better choice might be a commercial type upblast fan with a little more CFM capacity at high RPM so you could dial it in at whatever speed is effective (and not as noisy)....See MoreBuilt-in grill inside a screened porch
Comments (14)Felix, I would work with a local landscape designer (who has outdoor kitchens in his/her portfolio) sooner rather than later. In addition to the functional and safety issues of the grill station, I see there's going to be a pool. You'd benefit greatly from a conversation with a designer about what's going to happen in all of those outdoor spaces. We've done several outdoor kitchens for people with pools, and a big part of why they wanted them is to be part of what's happening around the pool while the kids are playing or people are over. If you have a grill head picked out, download the manual and installation instructions from the manufacturer's website to see the required clearances to combustible materials and ventilation requirements. Even if the back wall behind the grill has a stone veneer, if it's over wood framing you still need to be somewhere in the neighborhood of 10-14" away (I think, no time to look it up because I'm not supposed to be in my office this week). Comments (3)Absolutely you should have concerns. First is fire safety clearances to combustible materials. Open flames are a big contributor to house fires. Second is the ventilation that is required when attempting to cook under a roof. A grill will quickly smoke you out without some way of power ducting that elsewhere.
