Comparison propane and natural gas

If you have or are purchasing a "commercial," high BTU, 60" gas range with double all-gas ovens and you have both natural gas availability and propane availability, which would you choose and why? The propane version would be directly from the factory, not an after-market conversion. The propane would require use of an existing 500 gall. tank; the gas would require extending an existing underground line, but that is doable. I'm more interested in which is better for cooking and why. Also, it would be used for a lot of high heat and wok cooking.
