Ductless doesnt do much except partially charcoal filter the intake and then blow it back out into your space. If you can vent this to the great out of doors, you'll get far better return in exchange for all that fan noise :-)

Yes, bicoastal is correct that ductless hoods don't do much, and actually, if a duct is connected, you'll get LESS motor noise because it will be carried off through the pipe instead of getting back into the room. The guys I got my hood from really recommended installing a duct, and I'm glad I listened to them!

The steam on your cupboards is humidity. A ductless hood isn't going to get rid of any humidity, it's simply going to recirculate it.

If you want to remove remove steam and humidity from your kitchen, you're going to have to exhaust it to the out of doors. The only way to do that is through an open window, or through an exhaust fan ducted to the out of doors.

If your stove is along an outside wall or if you don't have a second floor above the kitchen, installing ducting or exhausting through the exterior wall is a fairly simple DIY project for someone who is handy. Alternatively, you could hire a good handyman or a heating contractor to install the ducting for you. It shouldn't be a terribly expensive project.

Ductless range hoods are only recommended in situations where ducting is impossible, such as condominiums or apartments in multi-story buildings or situations where piercing the exterior envelope of the building is prohibited.
