I shouldn't have written that I wouldn't display the spoons SINCE I don't know their history, as I probably wouldn't display them in any case. And, actually, I do know that they belonged to a great-great-grandmother I never knew, so that is a little history. Perhaps I will distribute them among my children, as little family heirlooms. My kids all seem to have some interest in all the old stuff. I am glad to know about the tarnish, as I have worried about a few pieces going too far. As for using things, I have begun using china platters and crystal pieces from the 1880s and 1890s that belonged to ancestors, and I love doing it. My mom always treasured these things and displayed them beautifully, but I have decided they are worth more to me and my kids if we use them and appreciate them for their intended purposes. Some of the crystal has a ding or two, some of it is perfect, all of it is beautiful, and Mom remembers that most of it was in use when she was growing up in the 1920s and 30s, so I figure I should use it now. If they are sterling and tea spoon size, they are worth about $15 to $30 each depending on the desirability of the pattern. If they are serving spoon size, they may be worth as much as $60 each....again dependingon the weight. If they are plated, they may be worth $1 to $5 each...again depending on the desirability of the pattern. What is the mark on the back? and how long are they.

There isn't a standard weight measure for a cup of flour, and you will find the number varies depending on the "expert", book, or reference - all the way from 4 to 5 (or more) ounces. It also changes with the type of flour (all-purpose, whole wheat, etc.). As an example, The King Arthur Flour 200th Anniversary Cookbook recipes are written for 4-ounce (by weight) cups of flour (page 115). Another well-respected author, Jeffrey Hamelman, in his book, "BREAD A Baker's Book of Techniques and Recipes" uses a 4.8-ounce "cup". Zojirushi used 3-1/2-ounces for a weight measure for 1-cup whole wheat flour..... Measuring by the cup isn't any better because people fill the cup differently and can get as little as 4-ounces and as much as 5-1/2 ounces packed into a cup. If you are making yeast or naturally-leavened breads, exact measures for flour aren't necessary because of the variables in flour. The gluten content (which soaks up the hydration) will be different from bag-to-bag, and brand to brand. Flour that has been stored in the paper bag in a humid environment will also absorb moisture from the air, so that can alter the amount needed in a bread.
