Bluestar RNB has arrived: Impressions and feedback

Just received and installed a BS RNB 30" and thought I would give some feedback for prospective buyers.

First of, I LOVE the look of the range. That's pretty much the reason I picked the BS over the CC. That, and the looks of the grates. But that's just my opinion and is therefor pretty inconsequential.

Don't need to really talk about the burners since everyone already knows about the superiority of open burners. But all I can say is "FIRRRRRE!". That's quite the fire machine!

Now for the hot topic: The infamous oven door. Here's the details after one hour at 450 degrees (from top to bottom):

-The horizontal stainless steel plate ahead of the burners is warm, but nothing uncomfortable.

-The knobs are warm as well. But again, comfortably warm (think seat warmers in a car).

-The vertical stainless steel plate behind the knobs is very warm: not a big deal with a quick touch, but will become too hot to handle after a few seconds pressing on it.

-The top of the oven door and pull out tray handle are hot: nothing more than a quick touch, keep your hand on it (if you could!) and it will burn.

-The oven door handle is cool.

-The sides of the oven door are pretty warm, but nothing too uncomfortable.

-The bottom of the oven door and kick plate are very hot. They are indeed the hottest spots. Again, your hand will instinctively pull back as soon as you touch it. It will not burn, but keep pressing (and why?) and it will leave a mark.

For those of you wondering about kids and pets my personal take on it is as follow:

They will not get burn as they will instinctively pull back as soon as they touch those hot areas (and will not try again). I'm talking about the two hottest spots here, bottom of the oven door and kick plate. The only way someone could get hurt is if for some reason they keep pressing on it (catching a fall for example).

As far as I'm concerned, I have no regrets, I love this range! Those burners man, those burners!!!! :-)

Agree-- have been using my RNB 30 for about 7 months -- not a problem.

I knew I would love the burners-- but -- wait til you try the broiler -- you have a treat in store.

Hi Sitelifer, There are a lot of differences between these two units that cater to different styles and requirements. The best place to start is to ask yourself what you want from a range. I honestly don't believe there is a clear winner 100% of the time. If you want an internal rotisserie, your choice is obvious. If you want a french cook top, again, only one choice. Neither of these ranges covers the same set of requirements so see if you can weed it down by that. To answer your question, my understanding is that the broilers are different. The CC has better coverage while (I think) the BS broiler gets hotter. The BS broiler is hotter than Hades at high noon in August. They claim 1800 degrees and my infrared thermometer tops out at 1000 degrees which it hits instantly when pointed it at the broiler. I browned a 12" fritatta a few weeks ago. Had the pan about 10 inches from the broiler and the coverage was great. I wanted to roast the tomatoes that I had resting on top and that happened very nicely. If you are toasting a baking pan full of croutons expect to have to rotate the pan. I wanted high heat as opposed to maximum coverage. Coverage is something I can affect, the max temp is not. Ktlri, Thanks for the follow-up as although the build is done, I haven't fully furnished the residence yet and had my professional shots done for our records and the community here. I'll admit - I had to go back over the thread and re-read to give the proper feedback but for the main range I ended up with a Zephyr 48" Monsoon II and a curvaball that I didn't even find out about until after this thread had already run it's course...I went with the Capital Connoisseurian 48" Dual-Fuel w/ 8 (Open) Burner configuration and I must say I absolutely LOVE IT. The fit and finish is as good as if not better than all of the BlueStars I saw in person (I visited about 6 different ones in 3 different stores during the process) and I've been estatic about the oven capacity and having an electric oven instead of gas for our baking purposes, etc. The electric rotisserie, electronic food probe and the kicker was the Wok insert (all of which I've used and very happy with the performance). It does take a while to get used to having this many powerful burners (all 25K minus the simmer burner) but it is a huge time saver for me as my wife and I both "prep" our food for the week on Sunday nights and with 2 cooks in the kitchen we can do multiple large quantities of food at once. Here's a couple cell phone pics and thanks for asking. One of these days once we finish with the interior designers and the furniture finally arrives (We're talking 12-16 week delivery times for most pieces - what the heck?!?) we'll get some legit shots done for everyone. PS - Sorry for the dim light on the 2nd pic as the Monsoon II isn't installed/turned on - we're still waiting to pass the final building permit tomorrow before installing the Zephyr as we already have 2 makeup airs installed to run the furnaces and the code was going to require an addition 2 (4 total) so we are working our way around that idiotic code.

I have a 36" RCS. I have a Lodge griddle that fits very well over two burners and is easy to use and clean. We don't use a griddle that often so this works perfectly for us. If you use one all the time though, having an integrated griddle might make you happier in the long run. As for the 22vs15k burners, if you don't cook a lot of meat (and it sounds like you don't) then I think you'll find the RCS has plenty of power for you. We had 12k open burners before we got the RCS and the difference is immense, so whether you get the RCS or the RNB you will notice a huge difference in the power of the burners. We do eat fish, but we don't eat red meat and dh eats chicken rarely, so for our type of cooking the RCS has plenty of power. Pan searing fish is wonderful on these burners. Sautéing, braising and caramelizing are all a breeze. We also do a lot of stir frys (no meat in them though) and they come out great. My guess is that the thin slices of meat you would use in a stir fry would sear and cook perfectly fine. 15k open burners put out a lot of heat!

I have a Bluestar 30" RCS v2 and a Zephyr Napoli 36" island hood (ZNA-M90CS). The stainless steel color match is very good. To my eye, they look as if they were made from the same batch of steel and brushed with the same tools and technique. I really love my Bluestar RCS but I have mixed feelings about the Napoli. It looks really nice but it is a lot noisier than I expected. Technically, the noise volume is relatively low and to spec -- ranging from about 40dB(a) to 66dB(a) depending upon the fan speed setting. The problem is not the noise volume, but rather, the quality/pitch of the noise. It is not the low frequency sound of air rushing through the baffles. It is a higher pitch whirring motor/fan sound right at ear level.. You can easily talk over it with normal conversation, but it is quite irritating to listen to. Also, as an island hood, its flat bottom capture area it is not very effective. If I place a steam kettle with its spout directly under the center of the hood (the baffles are 33" above the burner grates), a large portion of the rising steam hits the baffles and then just rolls around and up the sides of the hood to the ceiling. There is no effective storage volume below the baffles to capture and hold the effluent long enough for the air flow to completely exhaust it into the duct. In retrospect, I would rather have an island hood with an external blower and deep recessed, angled baffles.

Well I just realized why the bottom of the oven door and kick plate are so hot: There is no insulation at the bottom of the door. I'm not sure why, but the insulation lining starts from the bottom corner of the oven (inside the door hinge), goes up, then across the top of the oven, and then down the other side to the other door hinge. But it does not go across the bottom part of the oven. Not sure the reason for it, but I'm quite sure it's the reason the bottom is so hot!...

Inquired with Bluestar, and was told it was designed that way for proper baking.
So I'll go with mojavean's idea with barefoot cooking :-)

I visited a showroom yesterday and looked at both BS and CC ranges. I wondered why the BS kick-plate was louvered and the CC was solid. If I understand correctly the oven bottom is not insulated and that would make sense. I suppose more airflow might be needed for this style oven and the kick-plate expels any extra heat. From reading the BS owners love their ovens and a few CC owners have indicated uneven baking, but cooler doors. My suspicion is that the doors are heated from beneath and not through heat loss through the door. This may be a BS design carried over from Garland, but is still within residential guidelines. Regardless if you own either brand the heat will be caught by a hood and vented whereas a separate wall oven will just add heat to the room because of no venting. I will say I thought the BS oven to be visually more usable and the racks were definitely better. The flush oven bottom and flush broiler may make for more room. I still haven't decided which range, but either would more than meet our needs. I not sure I read the post right, but no insulation in oven bottom is what I think was reported and if incorrect please advise as to what is right.
