wild fermentation question

Hi everybody,

I've made ginger beer using the wild fermentation method a number of times with great success and to rapturous applause :-) but twice recently, with my starter bubbling beautifully, when I added it to the water, ginger and what not, the resulting mixture hasn't continued fermenting. I've looked at other forums where people have had the same problem - but no one has offered a solution.

Can anyone advise me, please? One thing I perhaps should mention is that I'm making kefir in the same room - but would that make a difference?
