Make mint juleps with peppermint extract?

I plan to make mint juleps this weekend for a crowd, and don't believe I'll have enough fresh mint. Has anyone used peppermint extract or another substitute? If so, do you have a recipe to share?

And...what bourbon do you prefer?

Doesn't take a lot....just a sprig per julep.
I am not a bourboney bourbon fan....so I prefer a blended whisky....like Canadian Club!!LOL! But Jim Beam works and isn't a fortune.
Muddle 1/2 tsp of sugar with a sprig of mint and about 1 tsp water in the bottom of a glass.....fill with chrushed ice and fill with bourbon and top with another sprig.
Drink slowly....because they will put you on your ear!

Linda C. and everyone else who keeps saying "no": The problem is that not EVERYONE can get fresh mint leaves. It is not often sold in my local market and when it is, it's usually sold out.

Then don't even get me started about when I lived in Alaska (I was in Alaska when I first joined this forum, but had a different user name). It was hardly offered up there and when it was, it was so expensive that I couldn't afford it.

I just wish people would get that not all of us live in a city or in the burbs. Just because a lot of you do, don't assume that the world does as well.

I don't mean this as harsh as it sounds, I'm just trying to point out that when we ask about substitutes we're not doing it because we just don't feel like getting the original. We're asking for a reason.

A nicer extract for mint would be almond oil based. Get a jar the size of the amount of leaf you have. The oil has to fill to the very top of the jar. You want as little air in there as possible. Don't mash it in but press it in tight. If you put the jar filed with oil and herbs in a pot with some water in it and heat it a little you will see most of the air trapped by the plants escape up to the top of the oil. You can also poke it a little with something to get the air out. Don't boil it - just heat it up a little. Put on lid while it's warm. I like almond oil personally. Leave it in a room temperature place for 6 weeks, any longer than that and you might get mold on the oil. Strain out all plant material and place in jar with dropper. 4-7 drops with tea is nice for congestion. Alcohol tinctures really need about 3 months of soaking to be the most they can be. You just need to cover the plant material with alcohol - not have to file to top. I don't leave mine in the sun.

Can you guys see any reason why I couldn't just steep the mint directly in the apple juice rather than using water? I made juice from the just slightly under-ripe red "not so" delicious apples on the tree in our yard (the landlord planted it). They weren't the most flavorful apples in the world. I was thinking they wouldn't overpower the mint with their flavor but I really don't want to water it down that much. There only around 8 apples on the tree and I ended up with just under 4 cups of juice. Just the right amount for a batch of mint jelly.

Marilyn, How would you store these? I have a DD who just got engaged (wedding should be a few years from now) and I am gathering recipes that are easy to make and I can do ahead. So far, she is saying she wants a small wedding at home, with MOM cooking! I don't mind that at all, in fact I'd love to do it. But, I don't want her disappointed after the fact because she really wanted XY and Z but settled for Q because she thought Dad wouldn't shell out for anything better.
