Thoughts on the Big Green Egg

Any Big Green Egg users out here? Now that I've returned my Virco Stainless, I've been thinking about the Big Green Egg instead of going back to a Weber Genesis.

Any thoughts? Thanks.

I haven't noticed a flavour difference from feeding them mackeral in small amounts either. There's a lot of exposed gypsum here. I read it could be substituted for about half their oyster shell grit so I ground some up and they went mad for it. Also half an old cabbage - wow. They treated it like one of those pumpkin soup tureens (only eating with their beaks instead of spoons of course - THE POOR THINGS HAVE NO HANDS.) - accidentally hit the caps key but the fact seems worth stressing. The horror of it. Annp! May 26 is my sister Rosie's birthday. She's the one who as a child was given a day old chick in a cardboard box by a kind neighbour, only to have it die during the night despite the big old alarm clock we put in with it. Wouldn't it be special to give her a Rose Combed Brown Leghorn. The timing (meeting at Dysart's) would be tricky though, also the 1000 mile drive. Did I tell you I never in my life slept as well as that one night at the Best Western behind Dysart's? I hope all those chickens are for you. They sound wonderfully exotic. Big, Egg-Bearing Spicebush Swallowtail

Okay, BG - here goes - Black swallowtail are small, for a swallowtail, that is. The key to identifying them is the round red area at the base of the hindwing with a black dot inside it - it looks something like a red eye. Here's a female black swallowtail. Females have lots of blue on the lower parts of their hindwing, with almost zero yellow. Males have a lot of yellow and very little blue on their hindwings - Pipevine swallowtails, my favorite butterfly, have been in short supply this year. I've only seen two of them, and I've gotten no eggs. Pipevine swallowtails have an iridescent blue patch on the underside of their hindwings, with a circle of iridescent orange spots within it - males and females both have this feature. Males have iridescent blue bodies - Males have a lot of iridescent blue on the top of their hindwings - Female pipevine swallowtails are mostly black on their topside, with with just a little blue there. They have conspicuous white spots on the outer edge of their forewings - Here's another picture of a male nectaring on a mimosa bloom - It's very hard to get good pictures of spicebush swallowtails, because they constantly flutter their wings. Spicebush swallowtails are big, but not real big, like tiger, giant and palamedes swallowtails. Their most distinguishing feature is the mint green lunules on the edges of their hindwings. These lunules always remind me of a character on the old Pacman games, maybe the things Pacman ate? Their undersides look very similar to black swallowtails, but they don't have the 'bloodshot eye' feature that's visible on the underside of black swalIowtails, and they DO have a long blue area there. Here's a picture of the underside of a spicebush swallowtail - Female spicebush swallowtails have what I call 'true blue' coloring on their hindwings, topside. This blue doesn't cover much area, doesn't go very high up - I could do a whole thread on male spicebush swallowtails! Most are sort of an ?ice blue when they first emerge, then fade to a sort of gray green in their old age. But some are practically green from the start, some are blue green, some are blue gray, and some are gray. Their coloring covers a much larger area of their hindwings than does the coloring on the females' hindwings. Here's a picture of a male I took one sunny day, and, for whatever reason, it looked iridescent, even though they don't really look that way. I just had to post it, though - Black female tiger swallowtails are HUGE - any time you see a black swallowtail that looks strikingly big, it's undoubtedly a black female tiger. They have extensive blue on their hindwings, like the yellow form. I kept my trusty Weber for about a year when I bough mine, and it quickly became a charcoal storage unit. Things that the egg-shaped cookers do "better" than a kettle or gas grill, are, in my biased opinion, and in no particular order: * High temperature sear -- I can easily get the coals to a yellow-orange temperature. It is hot enough that the stainless-steel grill "self cleans" and I get a beautifully marked and seared steak. * Capacity -- I can easily get a 25# turkey *and* four full slabs of ribs into mine (equivalent of a 22 1/2" Weber grill size) * Temperature control -- with the top and bottom dampers, I can much more easily control fire temperature than I ever could on a charcoal kettle. I can be at 700 deg (dome) temperature and shut it down to a 400 deg "dwell" in a minute or two -- basically puts the fire out and cooks using the heat stored in the dome (this also means that unused charcoal is not consumed) -- see warning below * Cook pizza -- Real pizza. 700 deg isn't at all hard to obtain and maintain. * No cover needed -- It's pool tile. Hose it off with the pressure sprayer from time to time. Disadvantages -- its harder to have a "hot" side and a "cold" side. It is clearly cooler around the edges when using it as a grill and I generally deal with it that way. WARNING -- Get yourself a good set of mitts and a ideally a fire-resistant apron, and always, always look away when opening any charcoal-fired cooker of any sort that has been "shut down" in this manner. The high temperatures that remain can "vaporize" all kinds of combustibles, that basically burst into flame when the oxygen rushes in when you open the top. Think turning on the gas in the oven and then tossing in a match. It has never happened to me, but I'd hate to find out that I lost the roll of the dice. Well, I went and bought a large Big Green Egg last week after taking my Virco/Kirkland back to Costco. I was debating over getting the Egg or a Weber Summit. The local dealer let me borrow the video tape that comes with each egg and after viewing it, I was convinced the Big Green Egg would be my next grill/smoker. I've grilled/smoked every day for the last 6 days (sometimes twice) and still have not finished a 10# bag of lump hardwood charcoal. It's extremely efficient and my first brisket smoked low and slow for 8 hours without much effort on my part.

See the link below for some pics of brisket, ribs, chicken, and trout. I have also grilled the best steaks ever on my egg. The amount of time needed was less than 20 minutes from starting the egg to putting nicely seared 2" medium-rare ribeyes on the plate.

I'm so happy, I now own 3 of them. Two large eggs and one small. This lets me cook something low and slow for 18 to 20 hours, and still lets me cook other things at the same time. The small is great for quick things, but I purchased it mainly to take on picnics and camping. I have never had so much fun smoking/grilling and the food turns out absolutly fantastic. I've cooked everything from 20 hour brisket and pulled pork, to smoked salmon, bratwurst, stuffed Jalapenos, chicken, & more.

Just a very late followup regarding the Kamado.. I just took delivery of a K7 last weekend and have cooked in it several times now (still in the break-in period) and currently have a pork butt and briskett going on it (at 210 degrees) that will take about 18-20 hours.. I've completely fallen in love with this thing.. I've already taken my two older grills and put them on the side yard.. Anyway, if you want something that's bigger and has thicker ceramic walls (meaning that it holds heat better) over the BGE, then I'd go for the Kamado.. I should be able to do a nice low-n-slow of the above meats for >20 hours easily with a single bag of charcoal lump (Cowboy brand in this case for now).

I've been using my BGE (large size) for 2 weeks and love it, however, I have not been able to get the temp over 600F. Any suggestions? Thanks.

Post that question over on the BGE forum (www.greeneggers.com) if you have not already done so and you will surely got more responses.

While 600F should be plenty to sear a steak, if you are not getting over that it is your fire. Check to make sure your grate holes are open and not clogged with coal dust. Use good quality lump and start your fires on the outside of the coal ring in multiple spots. My understanding, from reading the various Kamando style cooker forums, is that the center gets a bit better airflow so that starting the fire on the rim encourages more of the fuel to ignite more quickly as the fire travels to the center.
