Baked potatoes

Does anyone have a tried and true method of cooking baked potatoes on the grill? We're planning to BBQ a pork roast on sunday and want to add some potatoes. We want the potatoes to be medium size, not too big. We'll wrap them in foil and then we're thinking of letting them cook until a little soft when they are squeezed and then they can sit in a warm oven until the roast is done. Any suggestions from experience would be greatly appreciated.

Jen, I often do baking potatoes on the grill but I don't wrap them in foil first. I prepare them for baking the same way I would for baking in the oven. First I wash and dry them, and then rub them with either oil or butter, your choice, sprinkle with sea salt and place on one side of the grill. Make sure that this side has been heated and then turned off. The other side should be on high. The potatoes will bake with the indirect heat. About half way through baking I poke a few holes in the potato with a fork and turn it over. Let it continue baking until the sides are soft when squeezed or test with a fork. Cut a X in the top of the {{gwi:1388988}} and squeeze. I like to add some butter and then sour cream seasoned with some fresh chopped chives. If you like eating potato skins then you will really like these. The butter and the salt give them a nice crisp texture which you don't get if you wrap them in foil first.

I do mine like Ann's love the cruchy skin, I think the skin is the best part of the potatoe. LOL

Another good way that we like potatoes on the grill is to slice them up, along with some onion and garlic. Put in foil pouch, dot with butter add salt and pepper. Cook over direct heat about 30 minutes turning over several times.

I have made several potatoe bags, and soup bowl holders, and have only had one person say their bag had a few dark marks, along with a small burnt spot, where one of the seams were sewn. Thinking it was just marks on the fabric, as maybe there had been some food source on the outside of the bowl, and she attempted to hand wash it out, then realised that it was definitely the start of a burn situation. She had placed two potatoes in the soup bowl holder and set it for 6 minutes.....no wonder it started to get so hot and she tossed it into the garbage, Some of the holders I originally made, I used 100% cotton, wrapped with polyester,,,,I since hearing her story make all items to use in the microwave with 100% cotton, fabric, batting and thread, I also include a card to indicate no longer than 2 minutes of cooking time per item. Here are instructions to make a potatoe bag. Cut one 9 x 20 inch rectangle each of the outer fabric, lining fabric and batting. 2. Place the outer fabric and lining fabric, right sides together and batting against wrong side of the lining fabric. Press the outer fabric lengthwise in order to have a center line - see #3 3. On your batting - Using a ruler mark a line across and down from the top at 6" - (use this line so your points will match in the middle at the top of the flap and line up evenly across the bag), and then trim at a 45 degree angle from the center fold, to the outside edge on each side. Stitch around all sides, leaving a 3"opening for turning. Trim the excess batting, and clip corners. Turn right side out, poke all corners and point. Stitch opening closed. You can quilt your bag, before you proceed. Or Not. Fold the bottom up to within one inch of your outside points and stitch the sides, to create a bag. Launder before using your new potatoe and vegetable bag.

You definitely can use the rosin over again. Information at the Mast store where I saw the rosin said that you sacrifice the pot because once the rosin liquifies the pot can't be used for anything else. I think it's interesting they call them baked because you droop the whole potato into the molten rosin. I'm including an article I sent Tracy after we got home last night. Rosin Baked Potatoes Have you ever had rosin baked potatoes? Cooking potatoes in rosin produces the finest baked potato you will ever eat. The extreme heat of molten rosin produces a remarkably light and fluffy potato. How to bake potatoes in rosin? Place 10 to 25 lbs rosin in a large iron kettle. This sounds extravagant, but the rosin may be used repeatedly. Heat rosin to the boiling point. Hot rosin is flammable. So be very careful and keep the flame away from molten rosin. Slowly lower potatoes one at a time into the rosin using a large slotted wooden-handled spoon. Allow them to remain in the simmering rosin until they float to the top. Remove potatoes and place at once diagonally on foot-square sheets of heavy brown paper. Twist the ends of the paper and serve the potatoes in the wrapping. Why is it so delicious? The hot resin seals the skin of the potato, allowing it to cook very quickly while holding in the moisture and other nutrients. jude

I just bake the potatoes, remove most of the potato but leave enough to support the skin "boats." I mash the potatoes with milk, butter, salt and pepper. To that I might add sour cream and shredded cheddar. Then I shovel the potatoes into the boats, top it with a pat of butter (and more cheese or not) and stick it into the oven to warm through. You can add anything that appeals to you for mashed potatoes. I like chives, but DH doesn't. Sometimes I do not add cheese and just top it with cheese. You could use chicken broth instead of milk. It all depends on what you like.

Thank you! I couldn't check the replies before Sunday so we sort of winged it using our Weber's big book of grilling recipes. I scrubbed the potatoes and let them dry. We put them over indirect heat on the charcoal grill. They took almost 2 hours but were perfectly done.

If you don't care if the skins are crunchy, but just need a baked potato, this is what I do every Sunday, with my steak. Cut the potatoes in half. Spray olive oil on them, sprinkle with garlic salt w/parsley (McCormicks). Wrap in foil & cook @ Med for 1/2 hour. (If you are heating up your grill, Put them on the top rack, with the lid closed & they will be fine) Then you can do your meat. Audrey

Try this. Cut the potatoes into long strips, like steak fries. Coat them in olive oil and sprinkle with some Lawreys season salt. Cook them (direct low) till golden brown. Beats the heck out of tater-tots.
