Portion control for first real cookout

Hi! We just recently finished our (first) patio and didn't waste any time planning a cookout for some friends. The count right now is 15 adults, 3 kids ~8yrs old and 6 toddlers.

IN the past when we've hosted holiday dinners for a large group of people, we kind of anticipated having a lot of leftovers since usually, that meant turkey or roast beef sandwiches, etc. However, cookout leftovers are a little left versatile, so we'd like to exercise some portion control. The toddlers and bigger kids will have hot dogs, burger, and mac and cheese, so portion size there isn't a problem. However for the adults we were thinking beef skewers, chicken an sausage with 3 or 4 sides. Does anyone have a rule of thumb they use when figuring out how much food to prepare for a large group when there are multiple "meat" dishes? For sides, I was thinking pasta salad, grilled sweet peppers, dirty rice, and corn on the cobb if that helps. Please let me know if you think that's overboard too....
