Vine ripened or table-top ripened?

Asking for advice about WHEN to pick tomatoes.

We all dislike the store bought kind that don't have the rich tomato flavor but how long do you leave them on the vine? subject to predators: birds, hornworms, etc.

Once they hit the "break" stage" can they be picked and ripened on the tabletop (unairconditioned of course) and get the same flavor? How about tabletop in the sun?

I get a little worried just letting them stay on the vine for weeks on end and losing some. Guess I could do an experiment and try either way but if someone has already done it please respond :-)
