@Payal I don’t think Treg is here but maybe this will help. I have add ins for the following reasons. It gives you flexibility with your burners. Not only can you use 6 burners when you need them but you can place the griddle anywhere on the burners. I have picked up the whole griddle and put it in the oven. You can have your choice of metals. This makes it heat more evenly and they respond quickly when you turn them up or down. They make them in bare metal which will season eventually or nonstick. They are inexpensive so you can have both. Some people want steel and Chef King makes that. They are heavier to move. One characteristic of steel whether it is an add on or built in is that it has warmer and cooler areas. The add on isn’t confined to the width of the burner grates. You have the potential for a lot more heat with an add on. The heat for built ins is around 15K BTUs over the two burners. Depending on the burners you have, 15K on each burner gives you 30K, something like BlueStar would be even more. You can adjust the heat for each end separately. You can pick up the griddle and wash it in the sink with an add on. If you need to replace, it is easy and inexpensive. For some built in griddles like the steel ones it isn’t likely that you would ever need to do that but it depends on the brand of range you buy and what the griddle is made of and what sort of finish it has. The advantages to built in- easily reproducible temperatures. You turn it to 350°F you get that same temperature. For the add on it is more like using a pan. You have to eyeball it. Some people might like the stability of the griddle being built in. Some people just want the look of the built in. You didn’t say what brand you were looking at but there might be some additional considerations depending on the brand.

Hi msaudie, I have a 30" GE Profile Dual Fuel range that was in a home remodeling companies demo kitchen, which I bought at a greatly reduced price, but the center griddle and the oven probe were missing. I found this website that carries replacement parts for GE ranges a little cheaper than GE sells them. Maybe you can find the griddle you are looking for there. I find it suprising but it seems as though Wolf does not offer a griddle add-on for their 30" ranges. You mean a built-in griddle, right? I would find it surprising if any manufacturer offered a built-in griddle with a 30" range, since that would only leave 2 burners, which is limited and impractical. I posted on the Cooking Forum with my question about which (separate) griddle would make better pancakes, either a separate electric griddle, or an accessory griddle that is placed across two burners of my stovetop. I'll link the thread. Anyway, to summarize, I decided on the separate electric griddle. Someone pointed out that you can put the electric griddle anywhere (sideboard, table, outside, whatever), while a stove-top griddle can only be on the stove, and takes up valuable stove real estate. Also, my burners have different btu's, so it might be a pain to keep the griddle at a consistent temp across two burners. I bought the electric griddle and I love it. Just wanted to report that this thread inspired me to order an electric griddle (I've been making Ann T's oatmeal buttermilk pancakes every other weekend since January!). I used the new electric griddle yesterday, and the pancakes were much prettier and more even than the pancakes on my stovetop griddle, and it was much faster start-to finish given the size of the griddle. My gas range has the two different-sized/output burners, so the rectangular griddle pans never heat evenly (low on the high output burner is like high on the regular burner). And a regular griddle on the low output is just too small to do more than 3-4 small pancakes at once. Now I have to decide where to store the griddle in my tiny kitchen!
