I am going to give you my experience recently. I built a house 10 months ago and my dream of that wolf dual fuel was huge. Long before teh culinarian came out. Built my kitchen around that gorgeous wolf. First, my disappointment started when it would take me 40+ minutes to warm up my ovens (even the small one) to anywhere near 400 degrees. Racks were also hard to pull out. Then came the very uneven cooking on using convection and cooking on more than one rack. I called wolf. Sent a guy who stuck a thermometer in the oven to check temp. Told me it was fine. Next comes a chef. I was impressed on that and she baked cookies. Too bad that it was only on one rack. They were fine. Then she came back and it was multi racks. She says it is fine, I say not. It was obvious the cookies on the bottom much darker than the ones on the top. As a matter of fact a couple on the top rack were still very undercooked as she scratched her head and blew that off. She told me she would have the factory check why this happened, but then I would never hear back from her. I swear it was the convection system, the fans, something. They never took a thing apart. Griddle hard to clean. They did a buy back. Thank goodness! Ordered my new culinarian. It had an issue at delivery, so they are making me a new one. Company immediatly brought me a precision while I wait. Similar ovens at least to culinarian. A pleasure to cook with. Their griddle very easy to clean. I am giving you my experience because it was my dream, but I feel it was all in the name for me. No more of that. I need a cooking machine. Took 20 min to boil water on that wolf.

It appears from the picture that the oven controls are very, very similar to those used on the Maestro Wall Oven. Since Capital has already developed the electric controls for the Maestro it would be logical for them to use something similar on the dual fuel unit. Additionally, the Maestro has the "Moist Assist" feature mentioned. We have been using our Maestro single wall oven for about five months and it works very well. However, I think the electronic controls are a little strange. Don�t get me wrong they work well but they take some getting used to. The display is a rather dim orange and I would agree with Krutz that I will bet you will not be able to read the display unless you lower your head to near the level of the display. On another note I think the range pictured above is BUTT UGLY � no place in my kitchen for something like that!

Not the OP but I'm still on here and a lot of water has gone under the bridge. I had the Wolf DF for about 4.5 years and the cobalt blue enamel came off of the bottom after running the self clean. This has been an issue, if you look at the lawsuits on these ranges built as far back as 2006. Quite a few posters had issues of chipping with as many a three ovens in a row. The all gas versions do not seem to have the issue (no blue interior) although they are mentioned in at least one lawsuit. I like Dacor platforms that were bigger too but the ovens I had were worthless. Mine were with the Discovery controllers at the time, different from some of the other ovens. They have since been bought by Samsung and been through model changes through the years. I though maybe they fixed them but there was recently a poster here that bought a wall oven and returned it quickly because they had issues with it. What type of cooking do you do? The Ilve has a few things that might cause concern for some people. The burners are all underpowered for what most people want now. Ranges like BlueStar and Capital have 22-25K on at least two burners. The Wolf all gas also tops out at 15K and you may have had 15 or 16K on your Dacor range So maybe that works for you. I have 15K on my Wolf DF and it is OK but it is on all burners except one. Many people complain that a griddle with 15K is underpowered so 10.5K would be even less. They also mention that the griddle is stainless so it will not season like rolled steel on Wolf. Stainless by itself is one of the poorest conductors of heat so would heat unevenly unless it has aluminum or copper sandwiched in. The French top is also only 8.5K BTUs compared to 18K on something like BlueStar. Also check out the oven size. Look at the usable rack size. A lot of space is taken up by the warming drawer. Look at the broiler size. This is the manual. Self-cleaning works very well, with absolutely no problems on the Wolf DF 30-inch range. I've used it many, many times in the 4+ years I've had my range. As a result, my oven looks new. I can't imagine having a self-cleaning function in the range, and not using it. The range comes with full extension rack on the bottom, which tracks along the oven door for additional support. This rack is very nice when removing heavy roasts from the oven. Sounds as if you've not seen the Wolf range in person, so you can fully observe and assess what they have. I recommend you do that, because I think that will make up your mind for you. Another feature of the Wolf, aside from its great performance in cooking/roasting/baking is the superb quality of construction, and the attention paid to finishing detail. You should physically examine every range you're considering so you can sort out what is important to you, and what's not. With a Wolf, you will never have to worry about unfinished edges, or sharp edges, etc. I also recommend you take the time/make the effort to make an appointment to visit your area SubZero/Wolf regional distributor so you can see all of the products in person, AND so you can attend the cooking demonstrations on the Wolf, so you can see for yourself how the range works, how the cook top works, etc. These are free sessions, and are very helpful in giving practical info on the range to help you decide whether this is the range for you.
