Saving seeds using fermentation -- some seeds germinating!

I just started saving seeds and my first batch appears to have some seeds that have germinated! These are from an Oxheart tomato that I removed the pulp from, stuck the pulp in a jar, added some water, shook it up real good and then put it in the windowsill. I did come back and shake it and rinse out the water a few times. After one week I saw that some seeds were germinating.

Question: can the seeds still be saved or is it too late? Once they germinate, I assume they can no longer be stored. Is my assumption correct?
