Pig roast weekend!

Went to a family and friend pig roast on this past weekend! Had a great time, got to pick the banjo with other bluegrass musicians, got to quaff a few(yumm) Yeunglings with the owner of the farm! Rode the hay wagon ride, saw old friends, lots of fresh pork and beef and other picnic type food! (Yogi should have been there, in his pork-oops-pie hat!) Place was only 15 miles from home. So gas didn't cost much to go there! Motor home ran great!

Between the owner and all his family and relatives, and other friends, we had a great time. Weather was HOT, tho!

Another weekend is coming up for us bluegrassers soon, only 60 miles away! If the Mrs. lets me go, i'm going! (I'd go any way, just like to leave without hot tongue and cold shoulder waiting for me when i get back!) that's what an angry spouse serves up when ya do something she or he doesn't like!

Thanks - does anybody know if plain roasted tomatoes can be canned (in PC?)? I sent 22 lbs of tomatoes (4 gallons) home with my dad to put in their freezer, I didn't get to roast any last night but I've got a casserole in the oven now, a full sheet pan (disposable) single layer of mostly paste tomatoes cut up. No oil, no garlic, no nothing. DD and I were canning jam today so BWB still has water in it, if I can do BWB (how to determine how many tomatoes for proper acidification) that would be good but I know it will take longer than PC. These tomatoes had spots I had to cut out but weren't over-ripe. The ones I sent with my dad were REALLY ripe, some had soft spots (I cut out), others weren't as ripe but had anthracnose spots (salmon colored) so I don't think I can can those - just take out a gallon at a time to make sauce or soup (or fewer to use in chili)?

Annie, your post has put me into a very nostalgic mood. Reminds me so much of growing up on a farm, in an area very similar to yours, And my Mother doing so many of the things you do. That was before crock pots, of course, And I had never heard of yogurt back then, either. But raising cows for both milk and beef, Raising hogs, chickens, vegetables, fruits. Canning and storing for the long winter months, working hard to ensure enough food until the next crop came in, Was our way of life. Hard work, yes. Also satisfying work. I wish I had appreciated it more back then, I ofttimes wish I could go back to it. . . . . . . . . Thank you for sharing. Rusty

I agree, I'd love to see a picture. 28 pounds is a pretty young piglet, maybe a couple of months old, I buy "feeder pigs" that run about 30 pounhds or less and they are just old enough to leave their mothers. Going price right now is $40, but that's still alive and kicking and with both ears. I agree that the company should make it right, if I went to the trouble of roasting a whole piglet, presentation would be important to me. Like FOAS, I'd probably have gotten a fresh ham, with the rind on, and made an ear which could have been attached. So, how DID Wilbur turn out? I've been to lots of pig roasts here, my daughter even had one for her wedding reception, and it's always well received, you can't go wrong with roasted pork! Annie

cool! i'm envious and enjoying this series, a labor of love i can tell...are those flowers volunteers or did you add them? i can't wait to see your pigs...DH did the grow-your-own-pig thing years ago and wants to do it again, he thinks i'll enjoy the experience...told him i won't go to the auction and when he gets 'em he has to hide them behind the barn 'cause if he makes me look at one i'll have to touch it and then i'll have to name it and then it's a pet and he will NOT be puttin' a pet on my table...thought i had him til he said he'd get a runt for me to keep
