Open-Pollinated, several different varieties?

I want to stick with OP tomatoes so I can save seed. The thing is I see so many of you tomato growers that are growing many different varieties. I thought that you couldn't save seed if you've grown different kinds of tomatoes together because they could cross-polinate and then you'd be creating a hybrid that wouldn't come true in future years.

Please, clarify for me what I can and cannot do. I would like to have at least 2 OP varieties, but not at the cost of being unable to save seed from them.
