Sharon, I just love pecans and am looking forward to trying your recipe. We have several native pecan trees on our property. Actually we have probably a couple dozen trees, but two are right by the house and easy to access...the one in the front yard drops pecans everywhere. The one on the edge of the woods drops them into tons of leaf litter and debris, so I have to search harder for those. Most of the other trees are way back in the woods and I usually leave their nuts for the wildlife. I grew up in a pecan-loving family. If the only thing I do is make batches of pecan pralines for family members for Christmas, they are just thrilled to death. They're even tickled pink if I just give them big zip-lock bags of pecans from our place. Our first year here there was a huge bumper crop of pecans in the front yard right at Thanksgiving. All my siblings, their spouses, my mom and dad, my nieces and nephews, my aunt, my cousin and her spouse and kids spent their Thanksgiving picking up Wal-Mart bags full of nuts. They even wanted to eat outside at the picnic table under the pecan tree. Apparently they allthought they were helping me out by picking up the pecans for me. When I told them to keep the pecans for themselves, LOL, they ran back outside and picked up more. I was rolling on the ground laughing at them! "Oh", they said delightedly, "You mean we can keep them? Let's go find more!" Clearly my family members know the value of a good sack of fresh pecans! I had the last laugh though. I was SO relieved thinking of them spending all THEIR time cracking and picking out the nutmeats, because I'd intended to do it myself and give the nuts to them for Christmas. Instead, they all got gifts from the store, and I didn't spend a month of evenings cracking pecans and picking out the nutmeats to give away. So, we all were happy! I still need to find and post my recipe for pecan cream pie like my aunts used to make. I haven't made one in ages and just thinking about it makes me want to make one right now. Dawn

This one is always a huge hit when we go boating. Travels well, very tasty , substantial and a bit different. Don't let the ingredients list put you off it really is very easy to make. Real N'awlins Muffuletta (Weed) 1 cup pimento-stuffed green olives crushed 1/2 Cup drained kalamata olives crushed 2 Clove garlic minced 1/4 Cup roughly chopped pickled cauliflower florets 2 Tbl drained capers 1 Tbl chopped celery 1 Tbl chopped carrot 1/2 Cup pepperoncini drained 1/4 Cup marinated cocktail onions 1/2 Tsp celery seed 1 Tsp dried oregano 1 Tsp dried basil 3/4 Tsp ground black pepper 1/4 Cup red wine vinegar 1/2 Cup olive oil 1/4 Cup canola oil 2 (1 pound) loaves Italian bread 8 ounces thinly sliced Genoa salami 8 ounces thinly sliced cooked ham 8 ounces sliced mortadella orcappicola 8 ounces sliced mozzarella cheese 8 ounces sliced provolone cheese Directions 1. To Make Olive Salad: In a medium bowl, combine the green olives, kalamata olives, garlic, cauliflower, capers, celery, carrot, pepperoncini, cocktail onions, celery seed, oregano, basil, black pepper, vinegar, olive oil and canola oil. Mix together and transfer mixture into a glass jar (or other nonreactive container). If needed, pour in more oil to cover. Cover jar or container and refrigerate at least overnight. 2. To Make Sandwiches: Cut loaves of bread in half horizontally; hollow out some of the excess bread to make room for filling. Spread each piece of bread with equal amounts olive salad, including oil. Layer 'bottom half' of each loaf with 1/2 of the salami, ham, mortadella ,mozzarella and Provolone. Replace 'top half' on each loaf and cut sandwich into quarters. 3 Serve immediately, or wrap tightly and refrigerate for a few hours; this will allow for the flavors to mingle and the olive salad to soak into the bread.

Got all these from the cooking forum and they are favorites! Made the spinach salad from Ann for a luncheon, it was a very big hit! Vittorio's Spinach Salad from Ann T Vittorio's was a restaurant in Toronto that we use to go to years ago. Salad isn't something that I would usually order but I loved his. This is my recreation of his recipe. Salad: Washed and dried baby spinach 4 hard boiled eggs, peeled 4 or 5 cleaned mushrooms, sliced 1 can of artichoke hearts halved or quartered 3 Roma tomatoes, quartered 2 chopped green onions Kalamata olives Dressing: 1/4 teaspoon tarragon 1/2 clove of garlic 2 or 3 tablespoons wine vinegar 1/2 cup homemade mayo or Hellmans salt and pepper Place spinach in a large salad bowl. Decorate with eggs, mushrooms, artichoke hearts, tomatoes and green onions and olives. Drizzle with dressing and toss. Can be made on individual plates as well. Dressing: Soak tarragon and garlic in vinegar. Add salt to dissolve. Mix vinegar mixture into mayonnaise and adjust seasoning to taste. ------------------------------------------- Nancy's "55" Salad Dressing (wizardnm) 1 1/2 teaspoons minced garlic 1 teaspoon dry mustard 1/4 cup vinegar 1/4 cup water 2 teaspoons salt 1/2 cup sugar 1/4 teaspoon crushed red pepper 1/4 teaspoon cracked black pepper 1/2 teaspoon celery seed (optional) 1 cup vegetable oil Combine garlic, dry mustard, vinegar and water in a food processor or blender. Pulse to combine. Add salt, sugar, peppers, and celery seed (if using) With processor or blender running, SLOWLY add vegetable oil in a thin stream. After oil is added, continue to process another 3 minutes. --------------------------------------------------------- Creamy Roquefort Dressing (mqmoi) 1/2 cup mayonnaise 1 large shallot, minced 1 tablespoon Sherry wine vinegar 1 large garlic clove, minced 2 teaspoons Dijon mustard 1/3 cup crumbled Roquefort cheese 3 tablespoons whipping cream Whisk first 5 ingredients in small bowl to blend. Fold in Roquefort cheese and cream. Season dressing to taste with salt and pepper. (Can be prepared 1 day ahead. Cover and refrigerate.)

When smoking pork ribs or butts, I regularly make one of these sides to put under the pork for the last couple hours of cooking. The porky goodness drips onto them and adds some ridiculous flavor on top of the smoke. Keri's Hog-Apple Baked Beans Potatoes Au Gratin I just made those very beans this weekend along with a beef brisket, burnt ends, and corn on the cob all on the grill. I leave my corn in the husk, but remove the silk and let them soak in water with a little sugar for about an hour. Then just cook until there's a slight char on the husk and the kernels darken a bit. I have in the past used that same grilled corn to make this Mexican Street Corn Salad which I am obsessed with. For steaks, I pretty much exclusively do the reverse sear method. I almost always use ribeye and the reverse sear is perfect on a ribeye as it gives it time to render down a lot of the fat. My go to seasoning is Montreal, but will sometimes go simple S&P and maybe some garlic salt. I normally season right after I start the grill which takes about 45 minutes to get up to temp and stabilize. If you prefer to keep your meet in the fridge until grilling time, you can do that too. I aim for a temp of 225-235 on the grill, and I grill in-direct. I use a leave in probe and pull the steaks when they hit 125 degrees which takes 35-45 minutes. I then prep the grill for direct heat, and jack up the temp to 500-700 degrees (takes about 10 minutes which is perfect to rest the steaks during this time). The steaks get thrown back on the grill to flash sear for about one minute per side which with the rest and the sear normally brings the temps up to about 130-135 depending on your steak thickness. Steaks are perfectly cooked edge to edge and deliciously juicy. When I grill salmon, my go to is to use cedar planks as it gives them an amazing flavor. I typically stick with sockeye salmon as to us it's so much better than the atlantic we can get here in MN. I portion them out prior to cooking, and use a bit of salmon rub and cook until flaky. Because of the planks, you don't get the crispy skin, but I don't miss it.
