Which to plant - crossvine or bougainvillea?

I have a 30'x15' fenced-in, deer-proof garden I plan to use as a cutting garden. I bought and planted yellow trumpet vine thinking it was crossvine. After researching TV, I plan to dig it up and return it.

I live in central TX where it gets hot, and varies b/tw dry and humid. I think crossvine or bougainvillea will do well. What I mainly want it:

1) Deer resistant/high growth. I don't want to train/protect it up the fence every year, I want it to grow a big base and then grow from the top every year (out of reach from the deer).

2) Non-invasive. I will have a cutting garden in the garden and the regular weeds will be enough of a burden!

3) Low maintenance.

Tell me which you would pick, and please give me tips on growing it (i.e., grows on new/old wood, when to trim, fertilize, etc). I read that crossvine might take years to bloom?
