What sells best at market ?

While waiting to start seed I'm finalizing my varieties for this year.

I have an acre to use at a friend's organic farm. The tomatoes at the farm are sold at farmer's market, to restaurants or donated. I tend to grow sweet cherry types in all colors for my self, which don't sell that well at market. Those at farmer's markets here just expect the generic red round tomatoes. Some restaurants seem to like the spitters like yellow pear & green zebra so I do grow those.

I'd like to know what sells best - the red, round, tasty ones. I don't grow hybrids with the exception of Sun Gold.

Only OP, preferably heirloom.

I know I have a big variety there, but need more suggestions about red & round.
