Howdee all

I have decided to combine the posts for the Acres "squash it up" swap and the Acres "tomato and pepper" swap. The swaps will not be combined just the post. I am not blonde but have my blonde moments and have messed up a little so this is easier for me. Also several people are in both swaps so this is easier for all involved.

    Howdee there Sorry about the confusion booberry and patti. All better now? :-) I have been pretty busy with this or that gosh I cant believe its febuary all ready. I want to plant and you can tell that by the amount of my seeds I ordered. Any who enough of that you guys dont want to hear of my boring as ever life lol.     With the low amount of recipes comming in I have decided to start posting recipes on this post so every one gets one or two. Please feel free to post a tomato, pepper or squash recipe on this post. Also those who have yet to mail there mailer a recipe in only a recomendation :-)

    Stuffed Raw Heirloom Tomato
    Ingredients
    1 very large heirloom tomato
    Kosher salt and freshly ground black pepper
    1/4 cup thinly sliced white onion
    1/4 cup chiffonade fresh basil leaves
    1/2 cup small diced cubes fresh mozzarella
    1/4 cup sliced pitted olives
    Extra-virgin olive oil
    Tomato Water

    Tomato Water:
    1 large heirloom tomato, roughly chopped
    Few sprigs fresh parsley
    Few sprigs fresh basil
    Extra-virgin olive oil
    Kosher salt and freshly ground pepper
    Instructions
    Remove the top and the core of the tomato. Finely chop any edible parts of the top and core and reserve. Season the inside of the tomato with salt and pepper. Combine the onion, basil, mozzarella, and olives in a bowl. Drizzle with olive oil and season with salt and pepper, to taste. Fill the cavity of the tomato with the onion mixture. Serve the stuffed tomato on a bed of tomato water and garnish with the reserved chopped tomato.

    Yield: 1 serving

    Tomato Water:
    Combine all ingredients in a blender or food processor. Add just enough olive oil for flavor and season with salt and pepper, to taste.

    I think the ice storms that went through a week ago or so, still has the mail bogged down. It took over 7 days for me to receive a package from Ohio. I can drive to the Ohio border in 5 hours!

    Received several mailer today all with great seeds in them. My only problem I see is with the squash it up swap. It seems as most every one is sending in alot of the same variety of seeds. I will do my best to get everyone something different but this is going to be a tuffy. Just dont hate me because all I can do is my best :-)

    I have started adding seeds to some mailers of the wishes and will most likely POST a last call on a few things later in the week and through out next week. A new post will be started just for this. Now Im off to do some sorting.

    Acres - If there are a few items from my wish list on the squash it up, that would be wonderful, but I don't need a bunch back that I already have. I have LOADS of squash seeds and I'm not worried about getting back the number I sent in, so please make sure others have a nice batch :)

    LOL LOL Wedy just wants more seeds. No FAIR !!! LOL According to wikipedia: Eggplant is a member of the nightshade family, closely related to the tomato. Nice Try Wenders LOL

    Yeah, I think eggplant would more likely fit in the tomato and pepper swap. Or you could just call them a smooth, black squash and put them in my envelope *wink, wink*

    I am sorry but I went into a seed planting frenzy and planted almost all of my tomato and pepper seeds. Wont be able to send in as much.

    Here is my recipe:

    Oven-Dried Tomatoes

    20 firm-ripe Roma tomatoes
    1/4 cup extra-virgin olive oil
    2 tablespoons balsamic vinegar
    2 tablespoons finely chopped flat-leafed parsley
    Coarse or sea salt
    Freshly ground pepper

    1. Trim the stem ends off of the tomatoes, quarter lengthwise and remove and discard seeds. Place in a large, nonmetallic bowl and add the olive oil, vinegar, parsley, mixing well. Season to taste with salt and pepper. Cover bowl and allow to marinate in refrigerator for 2 to 3 hours.

    2.Preheat oven to 200*F (95*C).

    3.Place tomatoes in a single layer on a nonstick baking sheet.

    4.Bake for 16 to 20 hours. Ideally, the best time to place them in the oven is around 7:00 in the evening and bake the tomatoes throughout the night. The next morning you'll have plump, juicy and intensely flavorful tomatoes. Cool completely before storing.

    5. To store: Place dried tomatoes in sterilized glass jars and pour olive oil over to cover, seal tightly with lids. Store in the refrigerator for 2 to 3 weeks. Or, place tomatoes in a zipper-style bag and freeze for up to 3 months.

    Makes 80.

    Hey thanks for the bump.....

    And hey!! egg plants are purple. Well some of them are and I believe all purple things need loved. This will be my first year growing eggplant, I found a few freaky varieties at baker creek and had to get them.

    ON TO THE SWAP INFO : With tomorrow being the last day to receive mailers I would say wait for next year. I hate waiting for mailers LOL The mail has been really evil the last few weeks with the weather. I believe I posted this swap early enough so every one had time to get the mailers to me. I hate adding all these rules to these swap they make them so much less fun. These things are fun. Now lets have some fun :-) WATERRRRRRRRRRRR Sliddddddddddddddddddde

    Ok, yeah I'm a little nuts this time of year but who isnt with the economy in the weellllllll you know and my husbands hours have drastically changed there for mine have too and the man is driving me insane... LOL

    Any who I'm off to sort seeds and delve in to wish list. You all have a tremendous day and I will post as soon as I get a new mailer.

    OK Tracy, I have my water balloons ready. I'm still working on the really BIG sling shot to get them to Northern California! I'm so sick of snow!!! It's snowing today. It snowed yesterday. I'm ready for some fun in the sun, even if its virtual!

    I have to admit that I madly love Baker's Creek! Got a few purchases there for my birthday and Christmas. I'll jump on the water slide, though it's quite cold for it here: could you turn up the thermostat first? Sort a short global warming?

    Baker creek is my wish book. I mentioned I may want to grow eggplant and a dear friend ordered from baker creek and split packs with me. They are soo spendy I could not immagine what I would do with out trades and swaps...

    Been working on sorting seeds today for these swaps. My friend Jill came over to help alittle. She is a very new gardener and mainly just watched and asked lots and lots of questions.

    did not receive any new mailers today. Will keep you all updated.

    This is fun have you noticed Carol dear? Beat you tooo the water slide :-) Watch out for Boos water ballons though. We may have a war. You know if it warmed up a bit here in northern California it might just snow but that would mean we need to go out side. HAHAHAHA

    Off to sort more seeds. I packaged up some from my personal seed stash and we are looking good and most likely wont have to have post a last call post.

    A recipe for Wendy I know how you love that egg plant LOL

    Eggplant Parmesan

    Ingredients:
    3 eggplant, peeled and thinly sliced
    2 eggs, beaten
    4 cups Italian seasoned bread crumbs
    6 cups spaghetti sauce, divided 1 (16 ounce) package mozzarella cheese,
    shredded and divided
    1/2 cup grated Parmesan cheese, divided
    1/2 teaspoon dried basil

    Directions:
    1. Preheat oven to 350 degrees F (175 degrees C).
    2. Dip eggplant slices in egg, then in bread crumbs. Place in a single layer on a baking sheet. Bake in preheated oven for 5 minutes on each side.
    3. In a 9x13 inch baking dish spread spaghetti sauce to cover the bottom. Place a layer of eggplant slices in the sauce. Sprinkle with mozzarella and Parmesan cheeses. Repeat with remaining ingredients, ending with the cheeses. Sprinkle basil on top.
    4. Bake in preheated oven for 35 minutes, or until golden brown

    Mmmmmm! Eggplant Parmesan! I love eggplant parmesan! DH hates eggplant. So I always order it when we're out. It doesn't stop me from growing eggplant though!

    My apologies Acres, I completely missed the "recipe" component of the swap, but I love chilled soups!

    Chilled Tomato Soup
    4 Peeled Tomatoes
    1 Small Can of Tomato paste (or make your own)
    2 Cups of Chicken Broth (or 2 Cups of Water & 2 Chicken Boullion Cubes)
    1/2 Medium Sized Onion Chopped
    2 Celery Sticks Chopped
    1/4 cup Fresh Basil Leaves
    Salt & Pepper to Taste

    1. Place all ingredients in saucepan and bring to boil.
    2. Simmer ~15 minutes uncovered until veggies are cooked.
    3. Process until smooth in blender.
    4. Refrigerate for at least 6 hours, overnight is best
    5. Serve topped with your choice of sour cream, fresh basil or croutons

    Oh I can already taste those GARDEN FRESH Tomatoes in that soup recipe!!!! YUMMMY!

    I forgot what recipes I sent in, but here's a couple for tomatoes, peppers and one for a zucchini yeast bread.

    Panzanella

    This is an Italian bread salad. The Italians make it to use up stale bread. I make it to use up cherry tomatoes (I use halved cherry tomatoes).

    Ingredients

    Salad
    1 1⁄2 pounds ripe tomatoes (about 3)
    1 shallot, minced
    4 cloves garlic, minced
    1⁄3 cup extra-virgin olive oil
    2 tablespoons red wine vinegar
    1 tablespoon kosher salt
    1 cup fresh basil leaves
    Panzanella croutons
    Freshly ground black pepper

    Panzanella Croutons
    ¼ cup unsalted butter
    1 tablespoon minced garlic
    6 cups cubed day-old bread (½-inch cubes)
    Salt and ground black pepper to taste
    6 tablespoons finely grated Parmesan

    Core the tomatoes and, if large, cut them into chunks; if small, halve or quarter them (I slice the cherry tomatoes in half). Toss them gently with the shallot, garlic, oil, vinegar, 1 tablespoon salt, and pepper. Set aside until the tomatoes are very juicy, about 10 minutes. Add croutons and give a give toss. Tear the basil over the salad and toss gently. (The bread salad can be served now or set aside at room temperature for a couple of hours.)

    For the croutons, preheat oven to 375 degrees F and preheat a cookie sheet in it.
    Melt the butter in a large skillet over medium heat and cook until it foams. Add the garlic and cook until fragrant, about 30 seconds to 1 minute. Add the bread cubes and toss to coat with the butter. Season with salt and pepper. Transfer the bread to a baking sheet. Immediately sprinkle with the cheese and toss again while warm to melt the cheese.
    Bake, stirring once or twice, until the croutons are crisp and lightly colored on the outside but still soft within, about 8 or 9 minutes. Let cool. Store in an airtight container.

    Tortellini Salad with Pine nuts

    This recipe is from Picnic! By Edith Stovel. This serves 8.

    Ingredients

    Salad
    2 lbs fresh tortellini pasta (spinach, cheese or mushroom fillings work well)
    1 cup green bell pepper, chopped
    1 cup red bell pepper, chopped
    1 cup green onion, chopped
    ½ cup pine nuts
    ½ cup chopped fresh basil
    ¼ cup chopped fresh dill
    ¼ cup chopped grated parmesan cheese

    Dressing
    ¼ cup balsamic vinegar
    1 garlic clove, minced
    ¼ teaspoon salt
    Ground black pepper
    ¾ cup olive oil

    Follow directions for cooking tortellini. Drain and place in a large bowl. Mix in remaining salad ingredients.

    For dressing, combine vinegar, garlic, salt and pepper in a small bowl. Whisk in oil until well combined. Pour dressing over tortellini and chill.


    Zucchini Bread

    This is a little more work than the quick version. In the heart of zucchini season, youll enjoy this bread fro a change. This recipe is adapted from a Taste of Home flyer. Makes 1 loaf.

    1 tablespoon dry active yeast
    ½ cup warm water
    ⅓ cup warm milk
    ⅓ cup sugar
    3 tablespoons butter, softened
    2 tablespoons grated orange peel
    ½ teaspoon salt
    1 ½ cups shredded zucchini
    ⅓ cup raisins
    ¾ cup whole wheat flour
    ¾ cup all-purpose flour
    2 teaspoons pumpkin pie spice (or a blend of ginger, cinnamon, nutmeg, allspice and mace)
    1 ⅔ to 2 ⅓ cups bread flour

    In a large bowl, dissolve yeast in warm water. Beat in the milk, sugar, butter, and orange peel. Mix well. Add the zucchini, raisins whole wheat floor, all-purpose flour, salt and pumpkin pie spice. Add enough bread flour to form a soft dough.

    Knead the dough on a floured surface (5-10 minutes) until smooth and elastic. Place in a greased bowl. Cover with a damp cloth and let rise in a warm place until doubled (about 1 ½ hours).

    Punch down dough and shape into a loaf. Place into a greased 9x5x3 inch pan. Cover and let rise until doubled, about 45 minutes. Bake at 375 degrees F for 40 to 45 minutes.
