Spicy bacon chocolate

I'll give you a second to let the word combination in the title sink in a little bit. it's a great combo. I don't know why I've never posted this recipe.

1 bag bacon jerky
2 bags chocolate chips (I use 1 bag hersheys milk chocolate 1 bag hersheys special dark)
1/8th tsp of very extremely finely ground superhot powder, or however much you feel is appropriate. a tiny bit goes a long way.

put bacon jerky it in the food processor to get it broken up into chunks.

get a bowl that fits inside another bowl (or a large measuring cup that fits inside a pot, whatever works) to melt the chocolate in. the idea is to put the chocolate chips in the smaller bowl, and fill the larger one with freshly boiled water, so you don't have to worry about the chocolate burning. or you could just do it in the microwave, whatever floats your boat.

whatever method of melting the chocolate chips you prefer, I've found the best way to do it is melt the chocolate, stir in the pepper powder and get it really well distributed, then stir in the bacon chunks

spoon into a muffin pan with paper cups, and put in the freezer. you don't wanna fill the muffin cups, at about a half inch fill, this recipe will make about 12 pieces in your average muffin pan.

I have no idea how long these last in the fridge before going bad, they never make it that long. I make this for parties sometimes, and they freakin disappear. I've done it without the bacon, and I've also done it with rice crispies to stretch it a bit further. if you do it without the bacon, add a bit of sea salt.

I know extremely well versed chefs who have told me "it's best to leave chocolate to the pros" on account of how difficult it is to get it perfect, so I don't care if it's not perfect. it'll be a little melty, but so what? it's still delicious.

how else can you get so much joy for under $10?

Maybe I will try it with actual bacon. The bowl you put the chocolate in has to be absolutely dry. A speck of water will make the chocolate grainy.

What's the big deal about bacon? I eat maybe 4 slices a year, it has to be bendy, not brittle, but not overly fatty. I like it better wrapped around scallops or jalapenos than with eggs and toast, but it's still not something I can eat very much of.

A local ice cream place makes maple-flavored ice cream with bacon bits (real maple syrup and bacon from local farms) - that just sounds gross to me. Now, SAUSAGE and maple, there's a combo, but not in ice cream.

I've pickled okra, peppers, carrots, brussel sprouts, cauliflower, green beans, beets, and of course cucumbers....I love a good pickled vegetable! Cracked open the jar of Yellow Ghost sprouts the other day, and they were so delicious. They have just the right amount of crunch...not mooshy as one might expect. The sprouts by themselves really have very little heat. The garlic is amazingly flavorful. Two of my friends and I decided to fish the pepper out and try it directly. Classic mistake. The Yellow Ghost wasn't too hot, but certainly overwhelmed the mouth and stomach for a solid eight minutes :-) Josh

Thanks Cathy. I have made bacon with sushi many times. This is a new one made to show John one method on how crispy you can make the bacon without overcooking the fish. John was deep frying bacon with the fish (sashimi grade tuna). FOAS, thanks. I have found that baking bacon renders out the most fat, and that allows you to enjoy more bacon without feeling guilty. Making bacon rings on round object is difficult; one, you cannot always find the object with the exact diameter, the other, as you know bacon shrinks making it not possible to remove the rings without breaking them up after baking. I developed this method to overcome these two problems. 1. Get aluminum roof flashing (Home Depot) 2. Get Hose clamps (size is up to you, Home Depot) Use the aluminum flashing to form a tube, and use the hose clamps to hold the tube in shape. Oil the tube and wrap bacon rushers tightly on the tube and bake. After the bacon is done to your liking, tighten the hose clamps slightly to make the tube diameter smaller, the bacon rings will come off easily. It is so wonderful to have crumpling crispy bacon with velvety sushi in the same mouthful. It is so amazing to have sous vide creamy scallops, caramelized in bacon fat to be enjoyed in the same bite with crackling bacon. Textural contrast at it's best! dcarch

Ok so here is where we are at... I would do a meat dish (meaning cuts of meat vice ground beef) but this is a fairly large group and don't want to spend that kind of money. If it were a small group.. oh yeah! But this could be about 30+ people. There also may be about 13 dishes so everyone takes a small taste of each. It's fun! SO! Here is the original recipe I found on the food network. I figure I should share the original recipe and then tell you what I did to it.. :) Colcannon 3 pounds potatoes, scrubbed 2 sticks butter 1 1/4 cups hot milk Freshly ground black pepper 1 head cabbage, cored and finely shredded 1 (1-pound) piece ham or bacon, cooked the day before 4 scallions, finely chopped Chopped parsley leaves, for garnish Directions Steam the potatoes in their skins for 30 minutes. Peel them using a knife and fork. Chop with a knife before mashing. Mash thoroughly to remove all the lumps. Add 1 stick of butter in pieces. Gradually add hot milk, stirring all the time. Season with a few grinds of black pepper. Boil the cabbage in unsalted water until it turns a darker color. Add 2 tablespoons butter to tenderize it. Cover with lid for 2 minutes. Drain thoroughly before returning it to the pan. Chop into small pieces. Put the ham in a large saucepan and cover with water. Bring to the boil and simmer for 45 minutes until tender. Drain. Remove any fat and chop into small pieces. Add cabbage, scallions, and ham to mashed potatoes, stirring them in gently. Serve in individual soup plates. Make an indentation on the top by swirling a wooden spoon. Put 1 tablespoon of butter into each indentation. Sprinkle with parsley. ******************* So I didn't steam the potatoes, I boiled them. I didn't peel them either. I think skins add texture and flavor as well as vitamins. I added 2 1/2 Tbs prepared horseradish to the mashed potatoes. Then I added.. about a tsp and a half of this Fatalii Fire sauce I like. Even though the Fatalii pepper hails from Africa, the sauce is wicked and its yellow so it blends in color wise with the mashed mix. Basically, any yellowish hot sauce could be used here if deisired. I diced two jalapenos (I know.. Mexico..) and put them in with the cabbage while it was cooking. For the ham, I found a Boar's Head Cappy Ham (really wanted Hot Cap but oh well). Got a half pound at a chef salad thickness, maybe a hair thicker. Cut it pretty small but not super small. So far, I like it. It has flavor and a bite but thinking more bite. What I would change at this point.. more horseradish possibly. The Fatalii sauce has a flavor that I don't want to add more of even though I like the heat. The jals are a much deeper green than the cabbage so maybe a Hot Wax or other pepper with a similar color... that can be found in the grocery store! I guess it's not for everyone. but I love bacon, I love chocolate, and I love spicy things. it's no surprise that the combination of all of the above is, to me, magical.

I guess we all have different tastes. No quarrel there.
I do like bacon, I do like chocolate, I do like hot pepper but I won't like a mix of bacon, chocolate and hot pepper.

I like it next to my sunny side ups, now and then.
Nothing wrong if you like it in your chocolates or ice cream.

I just don't get why everything is bacon-flavored now. What makes it so popular? I don't really find it to have much flavor, it's OK when it's cooked just right, but too little and it's fatty, too much and it's burnt.

Whatever floats your boat, but like I said I prefer sausage, either breakfast sausage or hot Italian links (or crumbled into sauce or on pizza). Actually, I really like pork, all kinds of pork (even headcheese), LOVE smoked ham and Canadian (as well call it in US) bacon but bacon strips are kinda EH (shrug) for me (same with fried pork bellies). And I wouldn't go for sausage-flavored ice cream or ham-flavored potato chips.

But dark chocolate, sea salt and a little hot pepper powder - now that sounds good! That same ice cream place makes a vanilla ice cream with jalapeno jam swirled in - I might have to try that, though I think maybe candied jalapenos (Cowboy Candy) chunks might be better...

Well, you do have one point - it is surprisingly difficult to cook sliced bacon well. And a lot of cheap bacon is surprisingly tasteless. But an imagined slab of nice thick uncured piggie has me sitting here drooling all over the keyboard.

Sorry for the hijack. Darn, now I want a slice of ham and a couple eggs for breakfast! Maybe diced ham and scrambled eggs - hmm, where's that pork cookbook? Oh, right here, next to "How to Serve Man"...

Hey Judo,

I'm intrigued by the flavor combination but I've never seen bacon jerky. Is that just a local thing? I have a friend who makes what I think is the best jerky commercially, but it's not made from pork, it's made from beef or turkey. Can you elaborate on the bacon jerky?

Hmmm, sounds interesting, but I'm also not familiar with bacon jerky.

And not liking bacon? I just can't fathom it - a good quality and cooked up so it's nicely crispy...I could eat a bowl full! I'm sure that many would consider how I like it "way overcooked", but I love it super crispy, just moments before it starts to char...I have greatest success in getting it the way I like it by baking it in the oven rather than frying it.

I've only made it Epic Meal Time style....

Bake the strips in the oven, and apply the pepper powder to the bacon itself. Once cooked, place in the 'fridge to firm up. Prepare the chocolate, then dip the cool bacon strips in the warm chocolate, then back into the 'fridge for the chocolate to harden. Fantastic.
