Cross pollination, how prevelant is it?

So, I have read time and time again about covering blossoms to prevent cross pollination. How often does it really happen?

Example, I have 15 differnt types of hot peppers in my 600sf garden. If I save seed from an blossom that wasn't covered, what are the real chances that it cross pollinated? Is there any real chance that they won't cross?

I will likely start another thread about looking for this seed, but I am considering purchasing some seed for 7 pots, trinidads, and nagas. The supplier doesn't cover the blossoms. To me, that seed really isn't worth purchasing. Am I wrong thinking this way?
