Drying Chili Peppers in an electric smoker

Jennie Sims

I have an abundance of Cayenne Chili Peppers. I have been researching this forum about what to do with these. I've made about all the Chili Garlic Sauce we (and all of our friends) can use. Several years ago there was a discussion on using a smoker to dehydrate them rather than a dehydrator. I don't own a dehydrator, but do have a Smokin Tex electric smoker. I thought why not give it a try! I put in just a tiny amount of apple wood, set the smoker at 110. That was at noon yesterday. I took them out at 8 this morning and they are perfectly dried. And have a wonderful lightly smoked flavor. I was surprised this worked and wanted to share with all you chili pepper lovers an alternative to a dehydrator if you own an electric smoker.
