What do I do with all these medium-hot peppers?!?

Help! My moderate heat peppers went crazy this year (and I'm not complaining!). I grew Black Hungarian, Jalapeño and Fish. I counted 45 peppers on one Black Hungarian plant alone and the Fish is even more out of control. Plus, the Fish pepper had such pretty foliage that I put plants all over the garden. Now what?

I probably have enough frozen peppers to last me a while. Can I use the red peppers from these varieties for red pepper flakes? Will they be hot enough to match store bought red pepper flakes? What about using them for ground fresh chili paste that's like the store bought (rooster on the label, green top, Sambal Oelek). Does anyone have a recipe? Again, will these varieties work for it? I was planning to make apricot/habanero jam this year, but now I'm thinking of a jalapeño (or Fish, etc) jam, too. What fruits work well with jalapeños? Any favorite recipes?

I'd love to make jalapeño poppers, but I'm watching my weight right now. Could I use frozen jalapeños later for poppers?
