Are these hungarian wax peppers ready to pick?
Comments (9)The pods almost look more like Hot Banana to my eye, having seen both varieties growing together. Regardless, they are edible/ready for harvest as soon as they go grom green to yellow. If you want to pickle them or can them for sandwich rings/slices, et cetera, I recommend that you harvest the pods while they are yellow (so that they'll be firm and maintain their integrity when processed). I thought the two were just different names for the same pepper. Shows what I know! I went back and checked the labels, and sure enough they are Hot Bananas rather than Hungarian Wax. Thanks for the ID! I picked these peppers, and I think it was a bit premature. The flavor and heat were both less than expected. Comments (102)As a matter of fact, I DID make a nice Goulash (and misspelled the name, too, hehe)! Thanks, Rick and Bruce :-) I got the recipe from somewhere, and then I just used the Hungarian Wax peppers and the paprika powder + the dried Hungarian powder/flakes from my own stock. Here's the basic write-up that I did: "Hungarian Goulash - beef pepper stew :-) Chuck beef, beefstock, onion, potato, carrot, Hungarian hot wax pepper, parsley, caraway seed, garlic, paprika, olive oil, seasalt and black ground pepper to taste.Olive oil or bacon fat in pot, low cook the onions until translucent, salt to make tender. Add cut beef, sear all sides, add beefstock and water about one inch above the beef. Bring to a boil, reduce heat, and simmer until meat is tender - could take 1 to 2 hours. Bring back up to a boil, add potato, carrot, pepper, caraway seed, paprika powder, and the parsley bunch (tied with butcher's twine). Reduce heat, simmer until vegetables are properly cooked. Comments (9)Once your HHW peppers start turning orange, they will go to red relatively quickly. They start out more of a green yellow but soon turn to yellow as they grow to mature size. They then will sit in the yellow stage for some time even after reaching mature size. Then you will go out one day and notice a subtle coloring change on a pod or two. And within a day or so, you will notice a definite orange tinge appearing. It will go to a bright orange and then a week or so later will begin its change to a beautiful Red with a slight orange hue. It will stay that way for a good two weeks before you would have to pick it. The actual length in each stage is hard to nail down due to differences in soils, temps, sunlight, nutrients, etc... but they sit in the yellow stage for a long, long time. If you want max heat, you will just have to wait, but they are still quite stout in the yellow stage. Here is a photo of some of my HHW peppers from last year in early August. It shows all the color stages pretty well. Comments (4)The choice is yours. I've heard of some pretty tasty recipes using these peppers. Its hard to determine which is best. Probably canning as sandwich rings is the most common use. Even this method has many variations. Yesterday one customer told of a recipe of stuffing these with sausage and another using them canned in combination with whole olives, garlic and onions.
