growing in the shade in Oklahoma

I am in Lawton and need a variety of shade loving veggies. I have 4- 8*3 beds that are in the shade most of the summer. The only way I have to reduce the shade is to chop half the limbs off my neighbors trees! (The limbs come over my fence, and the owners do not care if I chop them.) I am wondering if I can come up with enough veggies that do not need full sun. The trees are on the west side of the bed, so I do get full sun in the AM. I am just not for sure how many hours of full sun I get!

What grows well in the Oklahoma shade for you? I would like to use the shade to my advantage if possible.
