Hatch N Mex Chile Peppers

I was given some "Hatch" pepper seeds.
I have seedlings growing and they are about ready to set out.
Does anyone know what kind of chiles are the famous Hatch Peppers?
Some say they are Jalapeño.
Some say they are Anaheim.
And some say the are Sandia.
Some say they can be any chile as long as they are grown in the fields of Hatch, NM. :)
I don't care what variety they really are as long as they make long chile pods and are deliciously hot. I want them for cooking, pickling, making jam, eating fresh, and for making big Ristras.
If anyone knows for certain, I would appreciate your input.
