salad greens

My next venture will be salad greens. We will put them in a container that is raised and is on cement blocks. I heard on the Victory Garden that the container should be cedar, and it should not be painted or decorated (finished) in any way.

Could you tell me what is a good size of container, and what kind of soil to use? Possibly this is answered in my tomato question. I saw on a show where the man said that he would go out and cut some leaves from many plants, and the greens would regrow. That is what I want to do. I like almost all salad greens, and would love to have something that I grow. I don't want to try head lettuce, but any others might be fun. What would be easy to grow?
