Are green habaneros good for anything?

Just checked what is left of my garden and found I have a bunch of green habanero peppers. A few had turned orange, but many of them are around the same size as the orange ones but still solidly green. Since it's likely to freeze tonight I thought maybe, if they're useful green, I should go ahead and take the larger ones off the plant. I could leave the smaller ones just in case the freeze doesn't actually hit my area, but I'd hate to lose perfectly good, useful peppers to a freeze if I don't have to.

I did go ahead and pick all the green jalapenos, but I usually eat jalapenos green anyway. This is my first experience with habaneros, though.

I don't know, but I did intend to find out. I picked my remaining green ones a couple of weeks ago with intentions of making a Christmas version of Habanero Gold. I though red onions and peppers paired with green peppers would look nice. (Un)fortunately, I've left them on the counter long enough they've all turned orange. C'est la vie.

I guess if yours turned orange on the counter I could at least pick them and see if they will ripen intentionally indoors. Of course, Murphy's Law may dictate that mine won't ripen because I want them to, and yours did ripen because you didn't want them to!

I do make New Year's Resolutions, and I really try hard to stick to them. My resolutions last year included trying to fix many of the things that were broken (health-wise) with my poor ol' body. I tackled the sleep apnea first and now have a CPAP machine that helps tremendously. Then I tackled the bad foot problems, and things pretty much stopped right there! More than five months later, I'm still not fully healed, so the rest of that particular resolution has gone to heck in a handbasket! And I absolutely do have hawg jowl and black-eyed peas, or Hoppin' John, for New Year's dinner. It's been a family tradition for my whole life. I don't know that it's brought me any luck, but having a pork roast in the oven and beans simmering on the stove makes the house smell like January 1 to me, every year. I'm thinking up my resolutions for this year as I type. It's always seemed like a good time to take stock of what I've done right or wrong the previous year, and to resolve to do a better job in the new one. Marcia

Yep, if they are just starting to turn color or close to turning color, they just might turn that orange color if ya leave em out at room temp in the kitchen for a few days. I had a bunch of immature and small hab pods that i just made a nice hot sauce just an hour ago. 20 Greenish Habs (cut the stems off) 6 ounces distilled white vinegar 1/2 teaspoon garlic powder 1/2 teaspoon onion powder 1/2 teaspoon paprika 1/2 teaspoon chili powder 1/2 teaspoon cayenne powder 1/2 teaspoon ground sea salt I put these ingredients in a food proccessor and blended the heck out of it for a minute or two. Then i poured this mix into a small saucepan and boiled and stirred it for a few minutes. Then i put it back in the food proccessor and blended it up for another minute or so and put it in a jar. I got this recipe from my friend's brother's friend. I'm making it tonight for the first time, so can't comment on it yet... it's a carrot-based (not sweet) recipe. Based on the specificity of the ingredient list I assume they've done several iterations and this represents their best result to date. [this looks like a pretty big batch, you might halve it] Habanero Pepper Sauce 1 Cup water 1 pound Habanero Peppers * 1 Â½ pounds peeled baby carrots 4 Tablespoons plus 2 teaspoons salt Â½ Cup plus 2 Tablespoons Vinegar Â¾ Cup plus 3 Tablespoons fresh lime juice (about 3 limes) 6 Tablespoons lime juice concentrate (about one of those green plastic containers) 2 teaspoons crushed garlic 3 Cups chopped onion Blanch the carrots and peppers in boiling water for 1 minute and then drain. Combine the ingredients and blend in a blender or food processor until texture is smooth, adding water if needed. Place in pot and bring the sauce to a boil. DonÂt cook too long or the carrots lose their bright color. Pour into bottles. ** Notes: *We usually de-vein and de-seed the peppers and the sauce is very flavorful but still has plenty of heat. Then we take the veins and seeds and cook them into the last bottle worth of sauce and it makes an insanely hot sauce. **The sauce must be stored in the refrigerator and will last over a year. YouÂll have to do your own research on how to do a more long term storage method.

You be the judge before you buy GE. We purchased a side by side refridgerator some 7 years ago. It's been a total 7 year lemon, I can tell you we would never buy again another GE appliance in a million years. It has been repaired over and over again, numerous motherboards, the motherboard behind the dispenser as well. The ice maker went belly up, no ice, then it totally went haywire and all we could get was crushed ice. The heaters have been replaced about 4 times. We were frightened to go away on hoilday afraid of what we might find wrong with the fridge when we got back. Do you know what a pain it is to have to empty the freezer section over and over again to defrost the back panel after the heater has broken. It is a right Royal Pain in the butt. All the frozen food has to be removed and the back panel taken off to be able to defrost around the freezer colis!!! *%^&*( $#%& We have contacted GE many times we also brought to there attention that the electrical contacts where the heater plugs into were scorched both sides!! Now, is this a major fire risk!! So the saga goes on, yes you guessed it, the auger in the freezer has come to a complete stop, will not deliver ice. When we purchased this no one told us that we would be subjected to continuous repairs and breakdowns of this aplliance. It would be a great unit for the Red Green TV show. We have been corresponding with Head Office GE and we asked for a replacement fridge because of the lemon we purchased. No was the reponse, we believe GE has been very fair to you!!!!! Are we living on the same planet? If that's GE's fair practise they must be out to lunch! We have put up with this crappy fridge for 7 years, repairs, breaking down, emptying the freezer over and over again! It just is non-stop and now the auger has completely stopped working and does not deliver ice. We have to come up with another $1100 for a replacement. You can eat them green. You also can leave them on the counter a long time and they'll turn orange. They last a surprisingly long time on the counter before turning orange.

If a freeze were a sure thing in your area, you also could pull up the entire pepper plant and put it in a non-freezing location like a spare room, insulated garage, tornado shelter, etc. and the green ones will slowly turn orange over a period of time.

There have been times I've decided to leave the plants in the ground, and then run outside and pulled up the plants after watching the 10 p.m. news if our local meteorologist seems convinced everyone will have a hard freeze. My general rule of thumb here is that if the temps are at 50 degrees by 10 p.m. on a night when frost or a freeze is forecast, then I go ahead and pull up the plant. At our house, 50 degrees at 10 p.m. in fall or spring almost always means 30-34 (or colder) by 5 or 6 a.m.

Seedmama, I did the exact same thing...left the green habs on the counter too long and lost my chance to have green ones in the Christmas hab jelly.

I don't know what the rest of y'all have in your forecast in terms of cold nights, but for us they are saying 27, so at our house that might mean 25 or colder.

They are saying 21 here, and since we don't concrete to retain heat, it will most likely be colder here in the country. Numbers like that make me cranky, so I probably won't even look at the thermostat in the morning. That, plus I'll be scrambling with food....

Dawn, by "pull them up" do you mean pot them or just leave them bare root? Would the same idea work for small, green cayenne peppers? I picked the few red ones but saw several green ones still on the plant. My garage is not really well insulated, but it does stay warmer in there for some time after outside temps drop below freezing consistently. I expect even with an overnight freeze the garage won't go below maybe 40 overnight, and maybe not quite that low.
