Habanero Gold / Confetti Jelly

Dawn, can you point me to your recipe for this? I found one, but I want to make sure I have the one you use :) I'm posting it for a friend on FB.

I use the Big Batch Habanero Gold recipe developed by Reading Lady (Carol) who is a frequent poster at the Cooking Forum and Harvest Forum. It is in the thread I've linked below.

Any Habanero Gold recipe you pull off the Harvest Forum would work. I believe the original recipe was developed by the Canadian canning supply company, Benardin, and appeared in one of their canning cookbooks years ago.

I use the Big Batch recipe also, because it makes expensive pectin go further. And because if I'm going to have to do dishes, I want a big bang for the buck.

Alrighty. I have all the ingredients, including the 1/2 and 1 pint jars. Just need to know how many jars to prepare and I'm ready to go. I also bought a bunch of blackberries on sale for 99 cents 18 ounce trays. Strawberries 87cents for large trays. Corn 12 for a dollar. Mangos 4 for a dollar. Tomatillos 69cents a pound. I have a feeling I will have a busy week. I started some sourdough because we're also completely out of bread so tomorrow will be bread baking and putting things up. I'm thinking blackberry jam, jalapeno jelly, habanero gold, some sort of corn relish (love that stuff), strawberry rhubarb jam, something with mangos in it. Wow, I'm going to be one busy girl! I just love our produce market. Best prices for fresh produce anywhere. I even got some more fava beans while I was at it for dinner. I'm addicted to those now.

Do the same with the onions! They freeze really well and last for at least 2 years. I buy a 50# bag of onions when they are cheap and in season, chop them up and put in the freezer for everything that calls for onions. You just cry a lot while chopping them is the only drawback since you get a room full of vapors. For making the Hab Gold jelly with the peppers - measure each kind and put in the small "snack" sized plastic bags, then toss them all into a big zipper plastic bag to freeze rather than all lumped together. Really easy to pull out a bag of Habs, a bag of sweet peppers, and a bag of onions. I have even thought of chopping the apricots and tossing them in the freezer too. Nancy

Thanks Jim for the kind words. We didn't even start preserving until a couple years ago and that was because of this Forum. You and several other regulars here encouraged us to try, then guided us through it. Now it's a BLAST! We'd never even made jelly before! This was our very first batch. And thank you Melissa. After this first batch of HG, we made Carol's "Confetti" jelly and it sure makes distributing the solids MUCH easier. And no, we didn't enter the State Fair this year, although we talked about it. Richmond is probably a 3 hour drive from here and we're not THAT confident (yet) lol! Maybe next year. Good luck on your entries - let us know how you do.

Thanks a lot for the quick response, Dave! I guess I will have to shell out some extra bucks for the liquid stuff. I got a great deal at my local wally world, 2 pack of Sure Jell for $2. I live in south Fl (zone 10a) and all the canning stuff is on sale, which makes no sense since aug/sept is are sowing time! Oh, well. Shannon

I use extra habaneros. In fact, I used almost all habaneros last summer and it really wasn't that spicy. Can't wait until my habaneros start producing this fall to make this again. I think it was my favorite canning item last year.
Everyone, including non-pepper eaters, loved it.

I agree. I make the 1/4c. recipe so my 3 YO can particpate in snack time. Then I make 1/2 c recipes for me, and 3/4 cup recipes for those who have previously burned off their taste buds with other peppers!

Thank you!!! I posted the recipe for my friend. She was excited to get this one and the candied jalapeno one.

I feel a little guilty that ya'll grow so many veggies and make so many great things and I grow flowers....

Why feel guilty? Your beautiful flowers are just as important in the overall scheme of things as our edibles. I do give my veggies more attention (mostly because they flat out demand it) but enjoy growing flowers and herbs as well.

Maybe your habaneros malfuntioned and weren't hot enough? lol When I use all habaneros, it is too hot for me, but I am a pepper wimp too.
