Hot Sauce Recipes

I remember a post from maybe last year or the year before where someone posted a huge amount of hot sauce recipes. Unforunatly i had problems with my computer. Im hoping someone can link me to the post (ive searched on it and can not find it) or saved them so they could repost it.

I'd love to get the recipe for Marie Sharps hab sauce. that stuff is about as yummy as mass produced gets.

Try this one.

Fire Starter Hot Sauce

20 fresh red habanero peppers -- stemmed
2 cups yellow mustard
1/2 cup brown sugar
1/2 cup white vinegar
2 tablespoons cumin powder
2 tablespoons curry powder
2 tablespoons chili powder
1 1/2 teaspoons kosher salt
8 fresh peaches
Combine all ingredients in food processor and process until smooth. Can in jars and pressure in boiling water bath for 20 minutes. Enjoy with chips or as condiment. About three to four pints.

I posted it at other posts too: 1. red fresh peppers 2. garlic cloves. 1 clove per 6-8 pods of pepper. 3. Kosher salt to taste 3. lemon juice, 1 tsp/100 gms of pepper 4. extra vergin olive oil. 2 tbs/100 gms of pepper. 5. venegar - for preservative. 1-2 tbs for about 400 gms of pepper. Grind into a coarse or fine paste. you can refrigerate it and keep it for several months. Its delicious! you can also use it for Asian cooking, sauces, or simply as chutney!

La hot sauce, like Tabasco, is a fermented hot sauce - hot pepper mash fermented for long periods of time with the required weight of salt, then strained. Most are not for canning but for freezing or fridge storage. Many recipes available over on the Hot Peppers forum but since they are low-acid based only a few may be canned if vinegar is added to them and the pH is tested first. Basically it is hot peppers including caps, weighed to determine amount of canning or sea salt required, peppers then mashed in food processor and salt added to mix well with samll amount of water if necessary to create brine, kefir (optional), and crock fermented (or dark container with air seal) at ambient temps of 70-75 for 6-8 weeks. So what experience do you have with fermenting? Do you have Joy of Pickling book? The brine ratios needed are all explained in it in both weight and measurements. Dave

CARIBBEAN STYLE HOT SAUCE

This is good on all kinds of meat, dried beans, greens and in soups, stews and chilis!

1 papaya, peeled, seeded and coarsely chopped
1 mango, peeled, cut from seed and coarsely chopped
1 finger of ginger, peeled and diced
30 habaÃ±ero peppers, leave or remove seeds, as desired for heat level
4 cloves of garlic
2 large onions, quartered
1 lime, seeded, quartered
1 cup of lime juice
2 cups of malt vinegar
1 cup prepared yellow mustard
1 cup of sugar
1 teaspoon of salt

Puree the solid ingredients in a food processor, using the lime juice and vinegar as needed to assist the puree processing.

Transfer to a large saucepan and stir in the remaining ingredients.

Stir to desolve the sugar and to blend ingredients.

On low heat, simmer the mixture for about 20 to 25 minutes, stirring occasionally to prevent scorching. Bottle in hot sterilized jars if desired.

CAUTION: If you decide to try this, do not sample more than one drop, until you know what to expect! The first sensation is that of sweetness, then POW!, the heat kicks in!

This is a very tasty, although VERY, VERY hot sauce! I make several batches every year and give away to family, friends, neighbors, or anyone brave enough to try it. It is not meant for the faint of heart! I label mine as being, "Not for children, women, or wimps!", however one of my daughters objects to this.

This reminds me of this chocolate bar I found somewhere that said on the label it wasn't for girls. I totally forgot what the brand name was though. Of course I bought one and ate it.

These habanero sauces sound delicious, and I get TONS of habs when I grow them.
