I got a nice big fat ribeye and some peppers, anybody have a good recipe ?

What kind of peppers?

I usually start by searching for a [insert meat here] rub as a starting point and add / adjust from there.

The best thing, IMO is to use a variety of peppers with heat ranging from mild or even sweet to however hot you want.

I got habs,japs and scotch bonnets. I know I could easily google this info, but like so many other things I like to hear from the voice of experience. I also have some pineapple!! I'm thinking I might make a bed of pineapple ,habs and let the fat melt over it., then flip the steak and drizzle on some soy sauce and then cook it on low heat so that is just a lil red in the center. that way all the habs juices get into it to some degree. sigh, if only my thais were ready, might make some excellent stir fry.

Did the Pan Seared, rosemary, garlic, bit of thyme too - it was sublime!! Definitely love the addition of the butter bath at the end, but I'll be honest, it scares me jsut a bit because the steaks seem to absorb that butter! Here you go Jackie. Home Cookin Chapter: Recipes From Thibeault's Table Salisbury Steak In Mushroom And Green Peppercorn Sauce ====================================================== What I call "Diner" Food. Serve with mashed potatoes and your favourite veggies. 2 pounds of ground Sirloin 1 onion finely chopped 2 cloves of garlic minced 2 tablespoons chopped fresh parsley 2 teaspoons chopped fresh thyme 1 tablespoon of Worcestershire Sauce 1 tablespoon Dijon mustard Salt and Pepper to taste Sauce 1/2 small onion chopped 1 garlic clove minced 1 tablespoon green peppercorns Fresh Mushrooms sliced 2 tablespoons Flour Broth 2 to 3 cups (Beef or chicken) Pan drippings plus 1 to 2 tablespoons of butter or oil. . Saute onions in 2 Tablespoons of olive oil until tender but not browned. Add minced garlic and cook for 1 minute. In a bowl combined ground sirloin, parsley, thyme, Dijon mustard, Worcestershire sauce and salt and pepper. Add onions and garlic and mix well. (I use my hands). Form into oval shaped patties. (I made 5 nice size ones from the 2 pounds, but you could make smaller if you prefer) Brown the patties in a heavy skillet in a little olive oil. You can also brown these in a grill pan. Remove the meat from the pan. Add a little more oil if needed and saute the onions, garlic and mushrooms. Sprinkle with a little flour, cook for a couple of minutes and add the broth and the green peppercorns. Add the patties to the pan, cover and simmer on low for at least one hour. Make sure there is enough sauce to almost cover the steaks. Salisbury steak should be very tender and not have the texture of a just fried hamburger. Simmering the meat n the gravy also enhances the flavour of the sauce.

A flank steak is quickly seared or grilled and thinly sliced. It is usually served rare for it to be tender. A cross rib steak roast should be braised/pot roasted. It isn't a tender cut. You want to slow cook it until it is fall apart tender. Ann

I use a clove of garlic rubbed with some kosher salt to a paste....spread it on the steak before grilling and I think it's better than anys easoning you could shake on. Or were you looking for something like this: Home Made Steak Sauce 2 lbs apples, cored & chopped 2 lbs prune plums, pitted & chopped 1 large onion, chopped 1 cup water 3 cups malt vinegar 1 tsp. ground allspice 1 tsp. ground ginger 1 tsp ground nutmeg 1/2 tsp cayenne pepper 2 Tbsp salt 2 1/4 cups sugar In a large heavy saucepan, combine apples, plums, onion & water. Bring to a boil over medium high heat & cook for 20 - 25 minutes or until fruit & onion are soft. Press apple mixture through sieve set over large heavy saucepan. (don't miss this step). Combine sieved apple mixture, vinegar, allspice, ginger, nutmeg, cayenne pepper, salt & sugar. Bring to boil over medium heat & cook for about 30 minutes or until mixture thickens, stirring frequently. Ladle sauce into hot half pint jars, leaving 1/2" headspace. Wipe rims clean. Adjust lids according to manufacturers directions. Process in boiling water bath for 10 minutes. Makes 5 half pint jars. Once opened I put in squeeze bottles & store in refrigerator. Linda C

I, myself, wouldn't waste a ribeye on masking the flavor of the beef. Salt, pepper, maybe some montreal steak seasoning.

Now, with other(cheaper) cuts of beef, chiles and pineapple would make a great marinade/glaze.

Oh, I was thinking dried peppers since that's all I have on hand. Sorry about that.

What you describe sounds better than anything I could come up with on my own.

For the Scotch Bonnets The first recipe posted at the link below is really good.

I agree with Kevin, only thing better than a ribeye is a filet. Although I usually add a bit of worchestershire sauce to the salt and pepper. ;-)

I like to make a compound butter with chopped up peppers, or with home made sauce. spread that on your steak, and season, and you are ready to go.

Ya, ribeye is nice to just work on by itself.. but you'll ultimately just get a spicy crust. unless you make a sauce to spread on from the remaining crispy bits, it won't overpower the awesome steak.
