Pony Tail palm problem

My pony tail palm was about 12 feet tall when it was ripped in half by hurricane Wilma (it is planted in my yard). I left it there and about 20 new sprouts came out over a months time. It really looks pretty (extremely bushy) but i wanted to remove some of the new sprouts and try to root them in a pot. Can I do this? I don't want to cut off a healthy sprout just to have it die. Should I thin out the number of sprouts? Will it hurt to leave it like it is?

Thanks for any help and advice you can give me.
