Iris Newbie - Have some questions

I just read through the wealth of information on irises. My home has an old iris bed. I do not think they have been separated in at least 15-20 years. I just dug up all the irises, separated them and am getting ready to replant.

Question: How long can the irises live out of the ground before replanting?

Question: Do you recommend planting them in clumps or as individual irises? I've seen both illustrated on the web.

Question: What other perennial plants do you all recommend to plant along with irises? I live in a wooded area where deer eat just about anything. I have some other bulbs I want to plant around my mailbox and was thinking the irises might make good companions for them.
